for lunch quick ones besides the traditional grill cheese? and quick dinner ideas besides hamburger helper?

For a quick lunch I use a bag of frozen mixed vegtables, small can of chicken and or left over noodles or rice and boullion. about 10 min you could always cook frozen veg in microwave fist then go from their.

I've been using this recipe every winter. It's a really refreshing and quick soup for the whole family.

Serves 10. Takes about 30 minutes to make.

Ingredients

    * 1/4 cup butter
    * 1/2 bunch green onions, chopped
    * 1/2 cup butter
    * 2 pounds frozen crawfish, cleaned
    * 2 (10.75 ounce) cans condensed cream of potato soup
    * 1 (10.75 ounce) can condensed cream of mushroom soup
    * 1 (15.25 ounce) can whole kernel corn, drained
    * 4 ounces cream cheese, softened
    * 2 cups half-and-half cream
    * 1/2 teaspoon cayenne pepper

Directions

   1. Melt 1/4 cup of butter in a large skillet over medium heat. Saute green onions in butter until tender. Remove from pan, and set aside. In the same skillet, melt 1/2 cup of butter, and saute the crawfish for 5 minutes; set aside.
   2. In a large pot over medium heat, combine potato soup, mushroom soup, corn, and cream cheese. Mix well, and bring to a slow boil. Stir in half-and-half, sauteed green onions, and crawfish. Season with cayenne pepper. Bring to a low boil, and simmer 5 minutes to blend flavors.

It goes pretty well with my garlic mashed potato...this will take less than an hour to roughly an hour

Ingredients:

8 to 10 cloves garlic, peeled
1 cup olive oil
4 russet potatoes
2 Tablespoons butter
1/3 to 1/2 cup heavy cream
1/4 cup Asiago cheese, grated
2 Tablespoons Parmigiano-Reggiano cheese, grated
Salt and pepper, to taste


Instructions:

1.  Put the garlic and olive oil in a heavy saucepan over lowest possible heat and simmer until soft; 30 to 40 minutes.

2.  Drain off oil (reserve for marinades or vinaigrettes).

3.  Puree garlic; set aside.

4.  Meanwhile, *bleep* potatoes with a fork and bake in a 400°F oven for 1 hour, or until soft. While still hot, peel and mash, or pass through a potato ricer.

5.  Melt butter in heavy cream; whisk in puréed garlic.

6.  Stir into potatoes.

7.  Stir in cheeses and season with salt and pepper.

8.  Spoon into a gratin dish.

9.  Place in a 400°F oven for 12 to 15 minutes or until browned and bubbling.

I will take a box of macaroni and cheese and instead of adding milk and butter to the powder, I'll add a small can of tomato sauce.  You can also add frozen chopped onions to it.

Quick and easy potato soup

Take 4-5 medium potatoes, peel and cube.  Boil in water (you want enough water to cover the potatoes twice) until soft.  Add enough milk to turn water white, and add a stick of butter.  Let butter melt.  Add oregano, basil, garlic, and either onion or onion salt.  Turn heat low and add mashed potatoes to reach desired consistency, keeping in mind that the mashed potato mix will thicken.  Serve with either cornbread or grilled cheese.

I've also found that Wal-Mart sells chicken *bleep* and chicken wings in bags.  I bought one bag of each, and I have enough chicken to make four batches of chicken and dumplings for less than $10.  Just boil the chicken (1 breast and 1 wing per family member) in salted water until soft.  Add buttermilk to the water and a stick of butter.  To make dumplings, mix self rising flour and buttermilk to a thick consistency, and drop by spoonful in boiling chicken and water.   I serve this with green beans (mixture of french and italian) and cornbread.

Perhaps my favorite thing to make...I'll use Zatarain's boxed rices and frozen vegetables together.  I like the rice pilaf with asparagus stir fry or fried rice with deluxe stir fry and a can of mushrooms.  I nuke the veggies with either a teriyaki sauce, or for the pilaf I will cover the veggies with water and nuke for about 5 minutes, drain, add 2 tbsp butter, oregano, fresh garlic, and Parmesan cheese.

Stuffed pizza... take one tube of croissant rolls (pillsbury works the best) and lay it out flat...do not separate!  Spread a small can of tomato sauce and sprinkle italian seasoning and garlic on top.  Add pizza toppings, like mushrooms, pepperoni, sausage, etc.  Sprinkle mozzarella and Parmesan on top.  Carefully roll it lengthwise and bake until golden brown per croissant package instructions.

I have plenty more if anyone is interested!  Cooking is one of my favorite hobbies!  I have a tendency to toss ingredients around the kitchen until something tastes right!

I prefer crockpot meals. Quick to put together and when you get home it is almost as if someone else cooked!

take two tortilla's place in hot pan, add shredded cheese and anything else you like, can be shredded cooked chicken and add BBQ sauce and place other tortilla on top. brown and flip .. ENJOY TIME!  (Serve  with a dash of sour cream YUMMO

I love grilling mushrooms, onion, and green pepper and putting that in the quesadilla... nom nom.  Its also easy to make fajitas...just buy some sauce at the grocery store...grill your veggies, and warm tortillas then top with veggies, cheese, sour cream, lettuce, tomato, salsa, guacamole, etc etc...

One of my family's favorites and goes with about anything - garlic pasta.

Boil up vermicelli or spagetti noodles, drail, add chunks of real butter (to tastes), garlic gloves, little season salt , mix wel, then add parsesean scheese, again to taste.

All sandwichs are quick for lunch..egg sald, tuna, chicken, turkey etc... and use your chop meat that you use for hamburger helper and buy store bought pie crust..mix the meat with taco seasoning and cheddar cheese then add filling to pie crust and bake them until golden brown!

I just got this quick lunch idea as follows please enjoy:

1 can undiluted mushroom soup,1 (7 oz.) tin water pack tuna,1 chopped shallot,1 stalk chopped celery

Mix, heat and serve over toast or puff pastry.
this will be my lunch today.

Fairly quick lunch idea (30 min max). I call it leftover pasta because that's how it got made the first time. The kids call it that pasta you make LOL

It will serve 1-2 adults and 3-5 kids depending on appetites. :)

1 box of pasta (your choice mostly I use elbow macaroni because that is what's available)
3 eggs
sour cream
shredded cheese
a can of sliced black olives
iceberg lettuce shredded
Whatever meat you have available (I have used pepperoni, hot dogs, chicken, pork)

Cook and drain pasta separate it into bowls. Scramble eggs. Separate eggs and other toppings into bowls and enjoy!

Quick Dinner idea: Baked Rice Casserole (serves 4 adults and a 2 year old  :))

1 cup uncooked regular long-grain rice
2 cups water
1 cup sour cream
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Cheddar cheese
8 oz can of green chilies, drained
1/2 cup shredded Cheddar cheese
1 package of Smoked Sausage, chopped

Preheat oven to 350 degrees. Cook rice in water according to package directions. Mix all ingredients except second 1/2 cup of Cheddar in an ungreased 2-quart casserole dish. Bake uncovered for about 30 min or until heated through. During the last 5 min of baking, sprinkle with remaining cheese. Bake until cheese is melted.

My husband has a short lunch break. We usually have sandwiches, soup, hot dogs, hamburgers, frozen pizza, pizza pockets, or anything that can go in the Fry Daddy quick!

I'm not a cook by any means but froze foods that you just throw in the oven are always nice, lasagna, manacotti (sp) etc.  Banquet has box meals that you just throw in the oven as well (you can find them on the hamburger helper aisle - they have box meals too!).  Using the crock is sooo helpful, depending on if you have kids or their agents they can always help out with that too.  :wave:

Buy a crock pot.  You can find lots of recipes online.  You just put all the ingredients in and forget about it!

I love quesadillas too!  I also serve with shredded lettuce.

Another thing we love in the crockpot is ROAST BEEF.  We put it in frozen the night before, sprinkle on a package of Lipton Onion Soup mix and add some water.  The next noon it is divine.
