Make it a theme of his favorite character, make scrapbook of his first year and put it away for him until he turns 18. One scrap book for each year.  I used to love taking my kids out to the park or zoo to celebrate their birthdays too and they loved it.

First Birthdays are the best.  Make sure you get a cake for him to pull apart and eat on his own.  A theme or character is a great idea.  Keep the party to family members and close friends.  Good luck and have fun.

Whatever you do, remember he is only a year old, so don't overwhelm him with too many unfamiliar people, lots of noise. I know I made a big deal on my firstborn son's and damn near scarred the kid for life! ;D It unintentionally turned into an 'adults having way too much alcohol and way too much fun' party thanks to my (ex)husband deciding on his own to invite all his buddies from work.

I think we forget that very young kids don't do well when they are 'expected' to have fun, especially when we turn their normal routines upside-down and they let all know it's NOT working for them. The suggestions of keeping it small and quiet(er) are on the right track. Whatever you end up doing, keep your little guy's contentment foremost and enjoy it, momma! ;)

you could probably get him some cake and candy. maybe take him to a park to have some fun. he is only 1 so he probably wont remember it anyways.

I would just do something you feel comfortable doing with family and take pictures cause most likely he wont remember the day all that much.. So what every you choose to do to celebrate his birthday should be fine!!
