Recipe for Greek Bean Salad
1 cup dried Great Northern beans
4 cups water
1 tablespoon vegetable oil
1 bay leaf
2 tablespoon vegetable
2 tablespoon olive oil
1 small onion, chopped
1/4 cup tomato juice
1/4 teaspoon garlic powder
1/8 teaspoon ground thyme
1 tablespoon dried leaf parsley
2 tablespoon lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper
Ripe Olives
How to make Greek Bean Salad
Sort and rise beans. Bring water to a boil in a medium saucepan.
Add 1 tablespoon vegetable oil and bay leaf. Drop in beans a few at a time, maintaining a rolling boil.
Cover and reduce heat. Cook until tender, about 1- 1/2 hours.
Drain beans, reserving liquid for another use. Remove bay leaf.
Heat 2 tablespoons vegetable oil and olive oil in a small skillet.
Saute onion in skillet over medium-low heat. When onion is tender, remove skillet from heat.
Stir in tomato juice, garlic powder thyme and parsley. Pour over cooked beans. Sprinkle with lemon juice, salt and pepper. Serve on individual salad plates.
Garnish each serving with 1 or 2 ripe olives. Makes 4 serving.
