It is just me & my soon to be husband. I fix a good breakfast (french toast, sausage, & eggs) the rest of the day we have snack type foods to eat on when we want. Like sliced cheese, crackers, BBQ, Lil smokes & meatballs, chips & dip, that type of stuff.
Good Luck

If you like soup, you might try some of the Bear Creek soup mixes.  They are easy and delicious.

If you have the ingredients you could always make a pizza and have a glass of wine or beer, or you could do just snacky stuff; cheese and crackers with a little deli meat, or another option is,  Walmart has boxes of already prepared hors d'oeuvres which I bought for Christmas eve and have not tasted yet, but it will be simple, also you could just google it and see what it comes up with.  Hope that helps MERRY CHRISTMAS!!!

You can make some lasagna or have some meatballs with rice or something. I think those two are very simple and great to eat as a christmas dinner

Made lasagna using "oven ready no cook" lasagna for the first time, and the recipe off the box.  It was quick, easy and turned out great!!

If I were alone with someone, I would still have fish. I have always had many kinds of shellfish on christmas eve and some ravioli on christmas day. I would buy some fish and pasta and make a small version of the big one.

It was just my son and husband and I. Our dinner was rather traditional, Turkey, mashed potatoes, green bean casserole stuffing cranberry sauce. I cooked for days! For Christmas Eve, we went to my brother in law's.

We had four get togethers for Christmas, and on Christmas day my husband and I were alone. We ate left overs and slept all day.

We also had nontraditional this year;  cheese dip made with crumbled sausage, Velveeta and Rotel chile tomatoes, roasted veggies, little smokies wrapped in croissants, hot wings.  Summer sausage, sharp cheddar, apple slices, and cracked pepper triscuits for evening snack.  White chocolate macadamia nut cookies for dessert.

I know what Christmas is all about but I focus so much on family time, I have 3 brothers, 8 sisters, and my parents are aging. My brother died a couple of years ago due to pancreatic cancer so family time is very important.

Normally we do a huge family meal,
but this year we didn't get to.
Growing family has too many commitments.
We had pasta and nacho soup on Christmas Eve
and Italian Beef on Christmas Day.

My family does very simple appetizer foods for Christmas and we eat around lunch time. The past 2 years I have gone by my boyfriend for dinner for Christmas and it's more sit down but I like the difference in our families and how they celebrate. It's still very relaxing for both of us though
