I love I will Always Love you by Whitney Houston from the Body Guard, thinks it a classic; but there are others also love the Theme song Shaft by Issac Hayes from the movie Shaft.

I loved the remake of "Mad World" that Michael Anderson and Gary Jules did for Donnie Darko. I felt that they made that song much more dark and brooding than the original Tears for Fears version, perfect for the dark theme of the movie. I also thought the music video for this version was interesting, filmed on top of a roof of a school with "kids" playing during recess forming shapes on the sidewalk below.
I also liked "Sh-Boom (Life Could be a Dream)" by The Crew-Cuts in the movie Clue. It just seemed to fit in perfectly, having more of that older doo-wop sound (that you could imagine being played at the Clue mansion when it was first built) but was also fun, the way that the movie was comedic.

I Will Always Love You from the Bodyguard is an old favorite for me too. There's many others as well.
