I was just getting ready to throw away some old small tomatoes and I thought about it. I have my magic blender on the counter in my kitchen, so I decided to mix the tomatoes, ground flaxseed & an apple, along with water all together and it was not bad. It saved me from wasting the tomatoes.
What do you do with your leftover veggies and or fruits? :) :thumbsup: :thumbsup: :thumbsup: :wave:

I use them as compost. Great for gardens.

When my bananas start to get too mushy, I freeze them and can use them later for banana bread.

I have a bag in my freezer, one for raw and one for cooked and I just throw left over vegetables in them. Then I have the urge for soups, or just need a little bit of something for a sauce or meal I can usually get it fr these bags. I also have a bag that I put tomato paste in, so many recipes call for just a tablespoon. We love smoothies and will make fruit smoothies with left over fruits. I also have a bag that I throw left over breads, biscuits, crackers, chips to take and feed the ducks at the park. I hate to waste anything, and since my husband had an accident and went on total disability, we have nothing to waste! LOL

Today I had to go through my fridge to throw out a few veggies. There were a few tomatoes that were slightly spoiled but I cut off the bad parts and made homemade tomato soup for the first time. Delicious!

With leftover veggies I just put together and make a stir fry and I usually dice up chicken *bleep* and no matter who eats it says it is good. We have a garden and I love doing that with fresh veggies also. As far a fruits we don't eat them as fast so I buy the canned ones.

I try not to waste anything so I usually keep leftover veggies in an airtite container so I can grab them as snacks during the day or cook them up in a stir-fry at dinner time. Fruits are usually harder to store. Stuff like old bananas I mash up and make banana bread out of. Berries can be put on cereal at breakfast time.

We try to use all our fresh fruit and veggies while they are prime to eat so they do not go to waste. Just yesterday I made 2 loaves of banana choc chip walnut bread with a whole bunch of bananas that had gone way past their prime, perfect for banana bread though

We rarely have any raw veggies and or fruit left over. I had 1 small zuccine left the other day so I just shredded it up and add it to my browine mix. Made them moist and good.But most of the time we eat them raw. Well me anyway.

I throw fresh fruits and vegetables in the blender. I rarely have any leftover because of that. But if you have some going bad...I would put them in the yard to put nutrients in the ground for growing more fruits and vegetables.

When the fruit & vegetables are at the stage that they are getting a little too old to eat, I walk to the park & leave them out for the squirrels and rabbits that live there. :)

I am on the same boat. I hate to waste any food but I also hate gaining weight from eating it all. My daughter was selling peaches for her school last week. We bought a case and were eating peaches like mad for two or three days. We gave a lot of them away. I sliced up about twenty five of them, put the slices in a Ziploc bag and froze them. I'll use them up in the next two to three months in fruit smoothies for the family. Leftover vegetables generally go into a wok for stir fry night with the family. We had a huge turkey one thanksgiving and figured out thirty different dishes that we could do with turkey for the month after and didn't get sick of turkey at all!
