corn meal tortillas. heat in hot oil for a few seconds. Have some ground beef or shredded chicken. Place on the tortillas (depends how many you want) Pour some enchilada sauce on them (heated up first)  and some grated cheese (Chedder) . Chop up an onion, tomatoes and lettuce put on plate with enchiladas and heat up some fried beans for the side also. the easy way.

A girl from San Salvador taught me to make enchiladas.

Ingredients:
corn tortillas
1 lg chopped onion
shredded cheese
2c Eva's red chili
2c tomato sauce
olive oil

Lightly brush the tortillas with oil on both sides, then cook to soften in a fry pan.

Mix the chili and tomato sauce together.  Spread some in the bottom of a shallow pan.  Add a layer of tortillas, then a layer each of onion, cheese and sauce.  Repeat the layers, as desired, ending with a layer of the onions, cheese and sauce.

Bake at 300 degrees for 15 minutes.  Cut into squares to serve.

I even like it cold, but my favorite way to eat it is hot with a fried egg on top, for breakfast.  Yum.  ;D

Somebody is hungry or just collecting recipes, LOL!

I like mine plain cheese enchiladas.

Soften corn tortillas on heating oil, fill n roll up with mild sharp cheddar cheese and a bit of diced onions, back to the pan no oil this time. I add enchilada sauce from the can to cover them up and sprinkle a bit more cheese on top, cover and let the top cheese melt and ready to serve, - re-fried beans and rice as sides.  :P
