How to grow vegtables in the winter and what to grow all seasons?

I'm going to take a couple old styrofoam coolers and will turn them into planters to grow lettuce, spinach and carrots. Just need to use container soil vs outdoor soil, and monitor the moisture content to know when to water it. For indoor growing, one also needs to have a fertilizer to work into the soil every few weeks, since the container is isolated, the soil nutrients won't be naturally replenished.
I've read this is possible and hope to give it a go this winter. I think it would be neat to harvest fresh carrots in January.

My wish is to someday have a green house so I can grow some of the cool weather plants. But it takes money and right now am redoing the house. It is hard and using a cooler sounds great. but I don't have a southern facing window where I can grow some plants.
