Anyone have any money saving recipes such as what to do with leftovers etc? My daughter's favorite is potato pancakes...just add an egg and some chopped onion and fry them up for breakfast the next morning! I usually add a touch of oil and a touch of butter to the pan! Better than homefries.

By money saving recipes, are you referring to cheap food or actual recipes?
If your eating on a budget, I am too and I'm doing pretty good I'd say. Potatoes, Rice, Noodles, Soy Sauce, Ketchup, Butter. What more do you need? 8)

Fry up a small amount of ham. Add whatever vegetable were on sale or markdown, along with whatever greens you can pick out of your yard (young dandelions, mallow, Swiss chard, etc.). Splash some balsamic vinegar in the pan, cover, and cook till done.

I make a few weeks worth of menus, that way I don't buy what we don't need.

Make 2 desserts with the same 3 eggs: use the whites for Betty Crocker White Cake mix, and the yolks for a pudding.

That potato pancake idea sounds great. I never tried potato pancakes. I definitely will try it as soon as I stock up on potatoes. The potatoes you use are they baked or boiled?

I suppose they'd be baked; boiled potatoes wouldn't fry up very well.

i will buy a picnic ham and have a ham dinner, and then with the left overs i will slice some off to make ham and eggs for a dinner and then with the left over bone i will make ham and bean soup,, eat off of that for a day or two, and what ever in not eaten i will make baked beans out of....

That's a great idea... Actually, if you cut the ham into small pieces, fry it, cook it with vegetables, and serve it with rice, you can make it go even farther.

Cheap easy cookies:
1 egg
1 cup sugar
1 cup smooth peanut butter
That's it.
Preheat your oven to 350 degrees
In a mixing bowl, beat the one egg lightly, then add the sugar. It may look like there is not enough egg there to moisten the sugar, but just give it a few minutes, it will come together quite nicely. Once the egg and sugar are creamed together, add the peanut butter and mix well.
Take 1 TBSP scoops of the dough and roll them into *bleep* and lay them on a cookie sheet. Then press them down with a fork. They need to be this size to bake properly. Yes, they are small but trust me, they are very rich, so the size is perfect for them.
Pop them in the oven for 10 minutes. Remove and DO NOT TOUCH for at least 15 minutes. (This allows the PB to set... you'll see.)
I can't honestly tell you how many this will make because not all the dough lasts long enough to be made into cookies. Hubby usually grabs it and mixes it with vanilla ice cream and tops it with chocolate sauce... better than any Reese's ice cream on the market.

My part time job is teaching people recipes that usually cost about $2 per serving. (and I make about $150 in an evening!). I suppose I can't post links, (and I'm new, is there a PM function? - if so I can share more!)
Here are some things I do to keep costs down in the kitchen:
Buy a cheap whole chicken. Roast it and have it with rice and either canned veggies or steamed whatever is on sale. Debone the rest of the chicken best you can. You can freeze the meat, or plan on chicken enchiladas or tacos later in the week. Cook the carcass with the leftover veggies for a great start to soup!
Find out when you're local grocery store/WalMart marks down their meat and buy it on the "use or freeze buy" date. Especially hamburger, I usually will cook it up with some garlic and onions and then freeze for a base to use for sloppy joes, chili or tacos.
And like someone else said, PLAN your meals. It will save you SO much $$. I make up a list of recipes I want to make in a month, then get all the ingredients for them. I don't plan it down to the day, but at least I know what my options are, and I only need to run to the store for fresh produce/milk once a week.

Peanut butter is something else to keep around. I have also found my husband and I are doing things like a healthy wrap (tortilla shell w/ lunch meat rolled up and put on the George Foreman - kind of like a Panani). Healthy and not expensive. The lunch meat can either be pre packaged or from the deli. We are using Chicken and Turkey because they are healthier. You could also cook up some chicken and cut it up and put it in there as well. There are so many ways you can fix them to be tasty but not expensive. You can use leftover items.

I like to make a recipe from bisquick called the Impossible Cheeseburger Pie. Its delicious. the recipe can be found on the back of the box. All it contains is ground beef with chopped onions topped with a mixture of the bisquick and egg to bake for 30 minutes. Before done baking top with cheese that will melt in the last 10 minutes. Its really good.

Pasta Bake
1 box rotini noodles (uncooked)
1 can spaghetti sauce
+ 1 can of water (use the spaghetti sauce can)
1 bag mozzarella cheese
Stir noodles sauce and water together (add some garlic or other spices if you want) bake in large casserole pan at 425 for 30 minutes, stir, add mozzarella cheese, bake for another 10 - 15 minutes.
If you buy the generic things it shouldn't cost more than $4 or $5 and it's awfully easy to make. Feeds 4 - 5 people. Have some garlic toast on the side.
It's what I'm making for dinner tonight. ;D

The potato pancakes sound yummy!! I usually freeze what can be frozen...I also freezer cook, so when I make a meal I usually make a double and freeze the copy...it saves me time later, because then all I have to do is unthaw and cook....it tastes just like I made it that night...and it's healthier and more cost efficient than frozen meals that you buy....
I also like to make casseroles out of some left overs...and the other night I had left over chili, after eating chili for 3 nights...so I added some velveeta and made chili cheese nachos....I still have chili left...lol...so I am going to make chili cheese dogs tonight....
I know that's alot of chili, but it saves money!!!

I've recently gotten into hummus a lot. Its delicious and low cal low fat. I spread it on everything, like Triscuits and bread. Its cheap and filling and easy!

i have four chickens.
i feed them my food scraps and they lay eggs in return. : )
three FRESH eggs a day. (i have three hens and one rooster) but knowing that these eggs are naturally organic and clean of all pesticides that they would use on the farm they just taste better. and i've noticed the shells are a lot harder than the eggs at the store. i would guess that means the chickens are healtheir.
and if i dont have enough food scraps to keep them fed, i feed them grass from when i mow the lawn. i keep them in a chicken coop and their crap makes good compost too.
its really a great thing. and also waking up to the rooster crowing every morning is just a feeling that makes waking up a little more pleasurable.

Where do you live? Is it a rural area? I live in the suburbs and I don't know how well my neighbors would take to being woken up by crowing roosters.

i live in the middle of the city Phoenix, Arizona. my neighbors love it. when i first got them they actually came over to tell me that they loved it and they wanted to see them. of course my neighbors dont really sleep in too much since they work. but i'm sure that if they keep the window closed, the crowing wouldn't be loud enough to wake them up since i sometimes sleep through it and its in my own back yard and i have a window facing the back yard. you also do not need to have a rooster. i only got it along with the hens because i plan on eventually when i have the money get an incubator and try to hatch some chicks out of it and try to sell them for a couple extra bucks.

its made of like mushedup chick peas, I believe. It is Mediterranean.
