Title: I want some recipies for a ramen noodle everynight budget!

I made a ramen casserole last night. Left over roast chicken, rice, cheese, eggs and tortilla chips. In the oven at 400 for 30 minutes. Some hot sauce and it was awesome. Any other quicky secrets? Even if it sounds crazy, I game. I just don't eat fish. But my GF does.... :wave:

I sometimes have chicken tortilla  Ramen.

It's easy Put tortilla chips or Doritos in the bottom of a bowl. Cut up cheese in small chunks and put over it. Then prepare the chicken Ramen as directed. When it's done pour it over the chips and cheese in the bowl. You can add parmesan if you want.

I find adding things like dried sweet peppers and things like that really liven up ramen noodles.

make ramin noodles in a skillet then add scrambled eggs to it w/ your choice of seasonings its pretty good

I like to mix mine with vegetables like spinnach, and any type of meat and hard boiled egg to make soup.

Buy some frozen cocktail shrimp, eggs, and green onions with your ramen.

Put a palm full of green sliced onions, ramen, a few shrimp, and crack the egg in a ceramic bowl.

break the yolk. Put in microwave.

Poof, you got some decent ramen soup.

My neighbor said she put some of McDonald's chicken nuggets, sweet n sour sauce, and some carrots in there. Like a little chinese thing with the noodles maybe?

I wouldn't advise eating Ramen Noodles because of all the sodium, but I guess if you're a starving college student they're OK.  Mix it with some chicken and veggies and you're good to go.  If you can afford to choose something better, please do.  You'll be grateful in the long run.

I agree with the healthy factor of ramen noodles which is completely going to contradict what I'm about to tell you.  If you've got kids - they will love this.  Dye your ramen noodles green.  Take a hot dog and splay it bout' 1/2 way down the middle 2-3 times.  When you boil the hot dog it curls up.  Put your ramen noodles in a bowl...put the hot dog on top of the noodles.  It will look like an octopus sitting on seaweed.  Add some gold fish crackers on the side to create a "sea" affect.

Heart Attack food for sure. Here's one that's a filler and my favorite quicky! Cook oriental ramen in the Microwave. Drain the water. Add the packet to taste. With out the water it can get too salty.  a squirt of mustard, two tbs of mayo, a tbs of sweet relish, last nights shredded beef or chicken, cheese, hot sauce  and mix well. Warm up some flour tortillas and make burritos. MMMMMMMMM.

it can be a healthy food if you let it be one. If you are lazy and blame your health misstep on something that comes in a basic form then really you are just hurting yourself. It is funny how people say they do not have any money for food and then they buy like five family sized ramen package and no vegetables or any ingredients to add on to their soup. People like that should just buy spaghetti and tomato sauce or better yet eat peanut butter and jelly sandwiches instead of fiending for ramen noodles. Not to mention that some canned beans are cheaper in the long run.

Have you thought about canned tuna? It is pretty cheap and versatile. Would be anice change from ramen noodles or hamburger helper.

Here is a simple but yummy tuna patty/burger recipe:
for one person you would use one 5oz can of tuna (makes 1-2 patties)
drain the tuna (but keep the juice in a cup for later use)
cube 1 slice of day old bread
1/4 cup of crackers or bread crumbs or plain chips
1 egg
onion, celery are optional


Mix bread cubes, drained tuna, cracker crumbs, onion and celery if wanted, and 1 egg in a bowl. add any spices you like (garlic, salt, pepper, celery salt, etc.).Add tuna juice in as needed to get consistency needed for forming a patty.  Mix it all up and patty. Fry with oil (i like olive oil) for about 3 mins each side. Serve on bun with mayo, tomato, lettuce, or eat plain, whatever you like!

We use canned mackerel and this basic recipe! (Just remove the bones... or not. They're soft and easily crushed if you're lazy :P )


As for the ramen recipes, I'm so lame. Other than adding cheese occasionally or some frozen veggies, I've never done anything with them. So I might try some of these as well! (Not that we eat noodles very often at my house as a meal.)

Ramen Noodles with tuna and some mayonaise and some mixed vegetables is like a Ramen casserole. :thumbsup: :wave:

    Do not use the seasoning packet. Go to the pasta section in your supermarket and select your spaghetti sauce: tomato (red) or alfredo (white).

There are some good ideas listed here; several of which I would not have thought about.   Amazon has several cookbooks using Ramen Noodles (including desserts).

I agree wholeheartedly. Personally if I was that tight on money I would buy dry beans and rice. And or use coupons. I use coupons even now that I no longer NEED to use them. I doubt I will even stop being cheap lol !

I agree too, however I live in Hawaii where food is more expensive. I have learned to go to China town to buy fresh fruits and veggies when I can, and the local farmer markets around the island are lots cheaper than the grocery stores. I never eat ramen alone. If I cant mix something with it, I'll just drink water. lol! Thanks for all your great ideas and comments! Aloha!

Thanks! It works well using chicken noodle soup too.  Or homemade soup if you prefer.

Somehow kids seem to like unhealthy stuff like Ramen noodles, but I use my own seasoning, and I throw off the seasoning packet that comes with it.

They are high in sodium only if you use the complete "flavor package" from the noodles. You can use half or less of the "flavor package" for an asian style soup or noodles, just add garlic powder and ginger powder, to replace what was not used. Sometimes I add other spices to make up for not using the complete high sodium "flavor package", like curry powder along with garlic powder and ginger. I have tried many more. The noodles are fast so I use them for a "quick" healthy meal. Add some, veggies (our Pathmark always has some raw vegetables on sale and a place called Corados has raw veggies a bag for a dollar, great for soup or to be used right away),  tofu or chicken (boiled or leftovers), boiled eggs, etc. Sometimes I make soup, other times I use less water and eat the noodles with veggies or add the noodles to a salad. They don't have to be as unhealthy, they can be the starch in your meal.

*save the rest of the "flavor package" for gravy, meat sauces, soup, etc.

I understand why people don't like to eat ramen noodles b/c of the high salt content. Usually salt is used to keep things fresh... What I do sometimes when I want to cut down on salt is i take only half of the seasoning packet & save the other half for another day. I also add other seasoning that have not salt in them.

One really good combination is getting frozen Cream Spinach a packet of spinach already seasoned in melted cheese. Yammmeee!

Another one is to take egg drop soup seasoning put in half & half of  the ramen season packet. & of course crack an egg into your hot piping ramen & egg drop noodle soup! I could eat that everyday!  :thumbsup: :wave:

I know you didn't ask, but I don't recommend ramen everyone night if you can help it, just not healthy. But to asnwer your question, I would mix ramen with whatever scratch you have around the house. Put in ham and cheese one night, maybe some crackers the next.

I would suggest off-brand pasta, beans, rice, and oats and eggs. I can sometimes find potatoes quite cheap (3.99 for a 5 pound bag). Ramen noodles are not actually that cheap. Although you can find them for 20 cents a package you are not getting any nutritional value at all. Plus basic ingredients like pasta, beans, rice, flour, oats, and eggs can be just as cheap if you buy them off-brand, in bulk, and don't eat more than you need. Prepared foods will never be cheaper then basic ingredients, and so prepared foods will always find some way to cheat you. They may seem like a good deal, but this is really just an illusion.

You sure correct about that. I usually buy ramen noodles in bulk, when they are on sale as well, and use them because they are fast to cook. But other noodles I buy in bulk at our East/West store, much cheaper than our Shoprite or Whole Foods. Oats and other cereals are cheaper if you buy the store brand. And purchase things on sale if you can.

Knowing how to cook is a very useful skill. Ramen noodles are fine if you want a quick meal, but their nutritional value is paramount to chips or fried french fries (Most instant ramen noodles are pre-fried). I would also recommend adding vegetables and an occasional canned salmon (Both for nutritional reasons, and because I would go mad if all I had to eat was beans and rice for a week straight.)

Cooking was a required skill growing up, my mother had us in the kitchen at five or six. We had to learn to peel things like carrots, etc. So all of my siblings cook. My youngest brother makes the best tasting cookies. My father started eating those noodles back in the late 50's when he was stationed in Japan. And my brother told me the Koreans (South Koreans) eat more of them then anyone else in the world. I may try to make some. I make my own egg rolls. You could get by on those beans much longer than a week if you needed to or had a need. In the old west that is what ranch hands ate. It kept them pretty strong and lean for the work they did. (Sorry all over with this paragraph it would give a writer or an English teacher fits.)

Aren't ramen noodles covered in some kind of chemical so that they don't stick together when you boil them that causes cancer? It would be great if this thread was looking for healthy recipes on a ramen noodle BUDGET, instead of just looking for creative recipes using ramen noodles.

People buy ramen noodles because the are perceived to be low cost. A better reason would be convenience. Instant ramen is not really healthy. Healthy and cheaper would be other noodles, not instant ones. The instant ones are instant because they are FRIED (they don't need anything on them, they have the oil they are fried in.)  (The noodles in the "plastic cup may cause cancer.") To make things worse, they (instant ramen) are high in  fat, sodium and have monosodium glutamate (MSG), preservatives and other (many like TBHQ, read a pack one day) ingredients, like "potassium carbonate", etc. If you make them at home, you need wheat flour, salt, water, and kansui (alkaline mineral water, containing basically sodium carbonate and potassium carbonate) or you can skip the kansui, use eggs or skip both. You can make them healthier eat less, and add vegetables, don't use the full "flavor package" add, powdered garlic, powered ginger (fresh if you have the time) or miso if you like.

 I put crunched up potatoe chlps,tuna,cheese, crunched up hot pickles and a little hot sauce. I call it a break, and boy! is it good eating! :thumbsup:

I you are ambitious, you may want to consider making your own noodles.  I found a site someone put together about how to make your own pulled noodles.  It has recipes and videos of how to do it.  Been wanting to try it out myself, but just haven't had the time yet.  This might be cheaper and healthier than buying ramen noodles.  I recently started making my own wheat bread, and I've been spending way less on bread since I did that - that's part of why I want to try making my own noodles.

I you are ambitious, you may want to consider making your own noodles.  I found a site someone put together about how to make your own pulled noodles.  It has recipes and videos of how to do it.  Been wanting to try it out myself, but just haven't had the time yet.  This might be cheaper and healthier than buying ramen noodles.  I recently started making my own wheat bread, and I've been spending way less on bread since I did that - that's part of why I want to try making my own noodles.

Hey thank you that site has a lot of good information. Since you like making noodles! Question is it just the "ramen" and "udo" you like? I love the "fun" (Chinese rice noodles) noodles too. And if you like soba, make your own soba noodles, eight parts buckwheat (healthier) flour with two parts white flour.

Yeah I found out the hard way they were not healthy.  I never read the packet.  WOW was I surprised when my Blood pressure shot up and I was retaining alot of fluid.  SODIUM wow large amounts.   I would try the peoples suggestion of making your own noodles.
