Title: sauerkraut

Not one of my favorite foods.  Just like liver, every now and then I just crave a couple of bites.  So I thought I would give making sauerkraut a try.  First time not good.  Didn't happen. I think I used the wrong kind of pans to make it. Number 2 crocks are recommended.  Don't seem to have those.  So then I thought about fermentation lids.  Easy?  Second time trying to make kraut.  I have really salty cabbage.  LOL  At least I don't have to through it out.  Has anyone tried the fermentation lids?  How do you like them?

Sorry, I have never even tried to make sauerkraut.  I’m making a pork roast with sauerkraut in the crockpot for tomorrow’s supper.  Love it, but it is a Pennsylvania Dutch staple.

I personally do not like Sauerkraut at all, but my Husband loves it. He likes to eat Sauerkraut and Weiners cooked together. He eats it mixed with a lot of different other Foods.

Unfortunately, much like everyone else that has responded to this thread, I have never personally attempted to make sauerkraut. I never actually tasted it, either, so I cannot state whether or not I like it.

We have successfully made it with the lids, but we live close to Verboort, Oregon where they have an annual festival every fall and we reload our freezer.

It has been serving (and selling bulk) hand made sauerkraut and smoked sausage to thousands of people every November since 1934 and In 2008, 15 tons of sausage and 2,000 pounds of sauerkraut were produced for the event. It is well worth getting in line at 5AM for and freezes very well to last all year.

What a great topic, as I love sauerkraut (and actually all German food. I don't try to make it, though. My husband and I looked into it and found out it was a lot cheaper just to buy it from the grocery store. I don't know that I've ever had any homemade sauerkraut. I'm pretty sure that the German restaurants I've been to buy it at wholesale. And I've never heard of fermentation lids. I'm going to have to look into them for possibly other things. Good luck if you try to make sauerkraut again, though!  :peace: :heart:

I absolutely love to eat sauerkraut all the time, but in my opinion, it is just better and more convenient to buy it at the grocery store. The Trader Joe’s brand is absolutely delicious. It is fully fermented and not the canned kind. Very healthy for you as well.

I've never made sauerkraut nor have I considered trying.  We do enjoy it on occasion though.  One of my favorite dishes that I like to make is a chicken reuben bake.  It's made in the crock pot and is one of the easiest things to make. 

Boneless, skinless chicken breast
Swiss cheese
Thousand Island Dressing ( I make my own )
Sauerkraut

I think those are all of the ingredients.  The crock pot does all of the hard work.   :)

Thank you for the tip.  I love Trader Joe's and will have to check out their kraut the next time we go.  I don't know that we've ever gotten anything from TJ that we didn't like.  They even have good wine, it you like that sort of thing.  Not only is the wine good but it's very inexpensive; not cheap, inexpensive.  There is a difference.   ;)

This is not my favorite although I do love cabbage.  I guess it is just they way it is prepared and seasoned just doesn't appeal to me.

I have never tried making it but my grandparents made it years ago  I love it but most of my family does not so I don't make it very often

I have made it both ways, the Lids are the easiest to use. I have never tried freezing it.

I remember my mother-in-law and grandmother-in-law making an ungodly amount of kraut one summer many, many years ago.  I think we still have a couple of jars of that kraut.  Would probably be deadly to eat now!  I never cared for kraut.

Amazing.  And you said you do have luck with the lids.  I sure would like to know what I am doing wrong.

I have been watching videos on youtube about fermentation.  I didn't realize how much you can ferment.  Not just cabbage.  It's your probiotics for the week. Or is it prebiotics.  Both you need.

I think it is really good with pork.  On hot dogs with some yellow mustard is delicious.

My deceased husband absolutely loved sauerkraut. Especially on hot dogs. Me not so much. I made a crockpot meal once for him with a pork roast, tart apples and sauerkraut and he loved that also. I thought it was ok.

This is an interesting subject.  I have been thinking about making my own kraut as my husband loves it.  I don't so much.  If I eat it I usually put brown sugar and butter on it and then it's good.  I will eat it mixed with some kind of ring bologna or sausage or something, but prefer putting brown sugar on it.

I haven't tried making it yet but, I did order a fermentation lid so would like to know how that goes, also.

Yikes, sounds complicated! I think I've only tasted the tiniest molecule of sauerkraut and wasn't a fan.
