Just have to be quiet and no fast moves.  Whatever has scared them in the beginning usually stays with them their whole life.  I "adopted" cat that was two years old.  Her previous owners were abusive and that dear little cat was scared the whole rest of her life.

Have you tried the "whips"?  They are pretty good and not the same consistency as the usual yogurt.
