I like your Rush answer but for me it would be with maybe Steve Miller or Don Henley for musicians, Ron Fellows for racing drivers and George W. Bush for comediens and dancers.

Well if Hello Kitty really existed...  LOL.  I am a huge teeny-bopper, never quite grew out of it.  I'd like to have dinner with Britney Spears, Hilary Duff, and Miley Cyrus.
