This is my favorite holiday!  I spend the morning cooking with my mother, we spend time together as family eating and just lying around watching movies and nodding off.

We make turkey and stuffing, pickled corn, green beans, a mushroom and broccoli alfredo, potato salad, and dinner rolls.  My sister in law is from Honduras, and she has added a rice and vegetable dish to the meal.  For dessert, we have pumpkin pie, pecan pie, banana pudding, and watergate salad.  Pretty much enough food to keep you stuffed for days!  My favorite is the vegetarian stuffing I make and to make mini sandwiches from the dinner rolls, pickled corn, and green beans.  Guilty pleasure... and it sounds disgusting, but I look forward to it all year.  :D

I think I'm going to attempt fako (lactose free) pumpkin cheesecake...and maybe my first pies as well.  I'd really like to figure out how to make tiny apple pies (not turnovers), and of course the dough has to be non-dairy...and I won't touch Crisco or lard.  may have to be polenta.
