what are the best receips out there?

Not sure what kind of foods you like but here are a couple

Chuck Wagon Tortilla Stack
1 pound hamburger
2-3 garlic cloves, minced
1 can (16 ounces) baked beans
1 can (14 ½ ounces) diced tomatoes w/green chili’s, undrained
1 can (11 ounces) whole kernel corn, drained
¼ cup barbecue sauce
4 ½ teaspoons chili powder
4-10” flour tortillas
1 ½ cups shredded pepper jack cheese
Shredded lettuce, chopped onion, sour cream, chopped tomatoes (optional)

In a large skillet, cook beef until meat is no longer pink; drain. Add the garlic, beans, tomatoes w/chili’s, corn, barbecue sauce and chili powder. Bring to a boil. Reduce heat; simmer, uncovered, for 10-12 minutes or until liquid is reduced.
Coat a large deep skillet with cooking spray. Place one tortilla in skillet; spread with 1 ½ cups meat mixture. Sprinkle with 1/3 cup cheese. Repeat layers three times. Cover and cook on low for 15 minutes or until cheese is melted and tortillas are heated through. Cut into wedges. Serve with toppings of your choice (optional items).

PIZZA POTATO CASSEROLE
1 pound of hamburger (browned w/onions and drained)
1 small onion (diced)
4 cups sliced potatoes
1 can cheddar cheese soup
1 medium can tomato sauce
½ tsp chili powder
½ tsp oregano
6 slices American cheese
1 cup mozzarella cheese

Mix hamburger, onions, potatoes and cheddar cheese soup together in a 9x13 cake pan.
Mix tomato sauce, chili powder and oregano together in a small bowl, pour over meat/potato mixture.
Cover and bake for 1 hour at 350°. Then lay 6 slices American cheese over the top and then sprinkle mozzarella cheese over the top of that. Return to the oven (uncovered) for a few minutes until the cheese is melted.

Mexican Roast
1 Beef Roast diced up into 1 inch pieces
1 can diced tomatoes with green chilies or 1 small can diced green chilies
1 large Salsa
1 garlic clove minced
Package of Flour Tortillas
1 can of Refried Beans
Mexican cheese mix or any cheese
Sour Cream
Put 1/2 to 3/4 of Salsa in the cooker with tomatoes with chilies (and juice) with roast and garlic the night before on low, in the morning put it on high, stir well, by 2 or 3 pm you will be able to pull the roast into shreds with a spoon, the meat will be done when there is no more liquid after shredding. When its time to eat, butter both sides of the Tortillas on wax paper. Put a line of cheese down the middle, then meat, and on top put the beans. Fold ends in first, then roll like a burrito. Place on a cookie sheet in the oven (preheated at 350°). Takes about 5 or so minutes until tortillas are browned. Serve with sour cream on top and salsa. Can also put in taco shells and you can do this with pork too.

I love to come up with new recipe ideas, and recently made some AMAZING quesadillas with leftover baked chicken!

It's easy!

All you need is pre-cooked chicken, tortillas, peppers, onions, shredded mexican cheese, and spicy ranch dressing! You can make them in a pan, or use an electric griddle like I do!

1) Take the leftover baked chicken and pull it apart into shreds. Set Aside.
2) Saute the peppers and onions in a skillet.
3) Place tortilla open in pan or on griddle
4) Spread spicy ranch onto tortilla
5) add chicken, peppers, and onions
6) top with shredded mexican cheese
7) fold tortilla over and press down with spatula
8) flip tortilla over and press down. brown for a few minutes

That's it!!

Hey, do you ever save the recipes from the daily PTC?  I've copied many delicious recipes from there.

Today, there was a yummy looking Spinach Quiche in there that we want to try.

We love Salmon and Chicken and I found many chicken and salmon recipes too.

I think they'll let you save about 20 favs.

Best Salmon Patties I have ever made!!!!

This is an easy dish that is economical, quick and easy.... 

1 can pink Salmon
1 large egg, beaten
2 green onions, finely chopped (including the white part)
1/4 Cup red or green pepper, finely chopped
10 saltine or ritz crackers, crushed,
1/2 cup frozen corn, thawed
 2 tablespoons Dijon mustard
3 tablespoons sour cream, plus more, as needed 
1 tablespoon lemon juice (optional)
1 tablespoon lemon zest (optional)
salt and pepper to taste ( add any other herb that you like)


Remove salmon from can and remove any skin or small bones, add lemon juice and lemon zest .... this really brightens the flavor and takes away a little of the fishy taste.  ;)
Add the remaining ingredients.  This can be stored covered in the refrigerator until you are ready to cook them. ..... Make them into *bleep* and press into a patty while rolling them in either PANKO (makes them really crunchy on the outside) or breadcrumbs or cracker crumbs .... fry the patties in a blend of oil and butter or you can use all oil... ( I use Olive Oil), use just enough to saute them a little ... maybe 4 or 5 Tablespoons...

These are great!!!  Add a side dish and you have a quick dinner.
