Recipe for Lemon Cake
1 tablespoon sugar
4 eggs
5 - 1/2 tablespoons butter
1/2 cup flour
1 teaspoon baking powder
Juice and zest of 1 lemon
Confectioner's sugar

How to make Lemon Cake
Preheat the oven to 350 degree.
In a pan, melt the butter on low heat. Break the eggs and separate the whites from the yolks. In a bowl, beat the yolks with the sugar until the mixture becomes white. Add the lemon juice, the lemon zest,
the melted butter the flour and the baking powder. Beat the whites until they form peaks and delicately incorporate them into the prearation. Pour the dough into a buttered and floured cake pan.
Bake approximately 20 minutes. Let the cake cool down and dust it with confectioner's sugar.

Sometimes I get the white cake mix and add a bag of chopped cranberries (I use the blender). I mix powdered sugar, butter and lemon juice to drizzle on top. It is really tasty. Your lemon cake recipe reminded me of it. I will have to make some soon or try out your recipe. =)

It is part of the peel, You can Buy a zester to get it off or I use a grater because it is all I have. It makes the "zest" bigger than with a zester.

Just grab your lemon and grate/zest until it gets to the white part of the lemon. You do not want the white part.

I know you werent asking for a cake mix but Duncan Hines makes a great lemon cake box mix, just add 3 eggs and oil and water and beat it with a mixer and it is sooooo delicious

I will have to try this, thanks for sharing the recipe.  When I used to live in NYC I would go to the Barking Dog on the upper east side. They had this great lemon cake they served with raspberry sorbet....yummy
