i have been reading up on both i think i am going to invest in both what do you think . do you prefer one over the other?

It depends on what you want to can and what you want to dehdrate. All meat but jerky must be canned. Fruits and tomatoes can be canned with a water bath canner. But anything else should be canned in a pressure cooker because of having low acid. Fruit uses sugar.

if you want to do some major dehydrating, then you'll probably need to consider getting an electric dehydrator.  canning allows you to make a vegetable/fruit into a different condiment or something (e.g. salsa or jam) so that you'll be able to enjoy in various ways.  and by having to make stuff into those types of condiments, you'll use up a lot of product.  you can also make pasta sauces, purees, etc., that you'll get to have variety in your pantry, if that's what you desire.

rehydration doesn't work on everything. i'd look at what item you were thinking to preserve, and then decide if it can even rehydrate to a condition where you'll want to eat it.  dehyrating carrots, etc. , may allow you to make your own dry-soup mix :)

i think canning is better i have never tried or had dehydrating.

I do both, I like canning the most. Dehydrating is easy for your jerky other things have not turned out so well.

i invested in both like both lol lots of clean up thankgoodness i have a dishwasher made beef jerky and dried bananas and canned some supper type meals now which one will i get tired of the fastest lmao

I do both canning and dehydrating somethings are better done when they are dehydrated and some work better when you are canning them.  I know that I do more canning than dehydrating but I have started to do a little more dehydrating.  We are trying to change the way we do things.

My grandma usually cans. I don't know if I know of anyone who has ever dehydrated.
