I cooked supper at the group home where I work.

We had pork loin baked in a sauce; creamy cucumber/onion salad, and cantaloupe cubes.

I haven't cooked yet today.  It's still early and one of those Sundays when the kids get home later and dinner is questionable.  If they haven't eaten yet my back up plan is to make home made blueberry wheat waffles along with a strawberry sauce and whipped cream.  Some turkey bacon and scrambled eggs with some left over cheddar cheese.  Maybe I'll make omelets for my oldest and I.  Her and I don't really go for scrambled egg's and I have all the veggie's on hand to make a yummy one.

I made something new as part of dinner tonight.  Quinoa. If you haven't tried it yet it cooks up just like rice.  It's higher than rice in proten and many other nutrients and was delicious.  I mixed it with fresh from the garden tomatoes, peppers plus cucumbers, a bit of jalapeno, cilantro and dressed it with a little olive oil and lemon juice.  Definitely a keeper.

I did and am not cooking a meal to day. We have leftover baked pork steaks along with potatoes and carrots plus a salad. I have been canning all day and i always cook something ahead so i won't have too. Have had 10 full days of canning in the last 2 weeks. I am tired of it for a few days. Friday a chicken will be put on to bake while i am busy else where.
