What did you eat for dinner today?

I ate pot roast, corn, potatoes and dinner roll for dinner and  I drank some pink lemonade.

Everything was delicious.

Softshell tacos at home with guacamole, salsa, etc.  Plus watermelon and a piece of icecream cake.

I had two bags of chips, some salami, a few slices of cheese and a few pretzels. That sort of meal helps me stay awake a little longer so that I can get more work done.  I should be able to work until eleven tonight. My days generally start out more healthy. Today I had yogurt with granola for breakfast and a big greek salad for lunch. I am working most of the time so if nothing is made I either go without eating or I eat junk food. Really no time for making meals. The family usually gets home later so I defer to whatever I can quickly grab and eat in front of my computer. Last night was one of the few nights that my wife didn't have tennis so she made hamburgers which isn't much of an improvement over the other junk food that I inhale. Three Sundays of each month I make up my lunches for the week and try to make enough extra food for better dinners but the family usually jumps on that.

A last minute dinner.  Meatball subs on sweet subs with swiss cheese.  A few left over fries from the night before with a side salad.  My fav...pumpkin croutons on top.  And a cup of coffee.  The meal didn''t make much sense..but it certainly hit the spot.

I made a homemade Potato Salad. I add,eggs, pickles, mayo, salt,pepper, pepper flakes, plus I add enough pickle juice to make it creamy and smooth.

It's 4pm at the moment, I usually eat dinner around 6, but latter I'm having chili.

We went out for my older son's birthday and I had the most wonderful delicious bleu cheese burger and fries.  Everyone really enjoyed it and seemed to enjoy their food.  Two people had salmon, two had chicken sandwiches and two had burgers.  It was an enjoyable meal and time together.

To night is what my mother is icaboxa Meaning it is leftovers. We will have pork tenderloin grilled  with potatoes also grilled last night   with a fresh green salad. There is only 2 of us. And it is hard to cook without leftovers. But hubby does not mind.
Tuesday while we are doing our volunteering work i will have a pot of pinto beans on in the crock pot. Then wednesday i will be making a few dozen beef, bean, green chili and cheese burritos. They are good frozen and then just pop some in the microwave, Also will be taking about 2 dozen out to dad. He likes them . Mean time  Tuesday nigh will have a great juicy hamburger for supper
