I do freezer meals if I know we are going to have a busy week,,,  they come in handy.  I usually try and plan for at least two a week.  Tuesdays  and Thursdays,   Dance Night  and soccer night  LOL

I do freeze some meals, but not often as my husband would rather have leftovers  the next day.  Sometimes though  when we know  that  i am going to have cook  late at night when we are getting home late i will put something in the freezer and then heat it up. But not often i would rather  have fresh cooked meals at least every other day.

I normally don't have a lot of time to put things together, except during the weekend, so making things fresh, is a challenge since I take care of my dad. His needs come first, so there are times when I will be prepping dinner, and he needs me to do something right then. It takes a lot out of me.

I just have had about 2 weeks where I haven't been sick either. The last 3 months were a pain, literally!! I get one thing, then end up sick with something else a few days later. That ear infection I had, lasted a month, then I get something else and finally over it, only to have my allergies aggravate me again!! It is still monsoon season and the fall bloom is taking place right now, I haven't felt well! My sinuses drive me nuts. I've been waking up between 3 and 5 AM, and staying awake, after going to bed at about 11:30 the night before.

My mom leaves all the cooking to me, even when I am sick. So when I can, I make these meals ahead of time. If I am sick, I will just grab it out of the frig, dump it in the crockpot and go rest. Then, when dinner time rolls around, she serves it up so I don't have to!
