Have any great salad or pasta recipes ?

Taco Salad , 1lb ground beef and drained , 1 pkg. taco seasoning mix , 1 small head of lettuce , 1/2 basket of cherry tomatoes, sliced or diced , 1/2 onion , diced , 1 kidney beans , drained , 1/2 1b  cheddar cheese shredded , 1 small bottle of catalina salad dressing . nacho doritos , broken  , you mix all that up . the ground beef you brown it , drain the grease off , put the taco seasoning mix in the ground beef , might add little water , mix that up . then mix everything up . really good .     :)

Yo. If you have leftover mac and cheese, it's not usually good cold. But if you add mayo and some veggies it's pretty darn good.

Combining the OP's two recipe topics together, I have a favorite pasta salad "recipe" that I like to make in the summertime. I don't have exact measurements because I usually just like to throw the stuff together and mix it up and then add more of one of more items if the final mix doesn't suit my taste. But I tried to put in approximations below.


It is Italian dressing based so I start with a one pound box of radiatore pasta. I've tried several different types of pasta, but found that radiatore soaks up the dressing the best due to its unique shape and it is also small bite size and easily stabbed with a fork.





After cooking, draining, and cooling it off in the fridge for a bit, I add a small can of sliced black olives and about the equivalent amount of sliced green olives; maybe 3/4  - 1 1/2 cups of cheese crumbles depending on how cheesy you want it - (I used to take blocks of mild cheddar and Monterey Jack cheese and cut them up into tiny pieces, but the Kraft cheese crumbles are just as good and already in the right size); one or two 1/2 inch slabs of deli hard salami diced up in pieces about the same size as the cheese; and then no real uniform size/amount of grated parmesan cheese and a healthy dose of Italian dressing. Those amounts both depend on how much or little you prefer. I like just a light coating of the parmesan once fully mixed up - nothing overbearing; and probably about half a bottle of the normal sized dressing.


Mix it all up well in a large serving bowl (lots of fun with your bare hands) and serve it right away, or chill it in the fridge for later.  I sometimes add more cheese, olives, or salami if it doesn't seem to have enough of that flavor and I almost always top if off with more dressing at each serving since the pasta tends to soak up most of the first dressing application.


I'm not huge on most vegetables. I'm sure it would be good (if you like that sort of thing) with some onions, cucumbers, or sliced peppers, but I already stay away from those in any lettuce based salads myself - so I don't want to "ruin" my favorite pasta salad with them!


I've also thought of adding grilled chicken to the mix, but I like the spiciness and texture of the salami and so far have opted to just stick with how I know I like it.  It probably would be good with other similar dressings also - maybe a balsamic vinegar, or some of the other fruit based oil and vinegar mixtures.


I just finished off a batch last week and have the fixins' at home to make a second batch. Maybe I'll be ambitious and do that tonight!

^ I just made another batch of the pasta salad described above.  Here is what it looks like as a finished product. The larger reddish splotches are pimentos that were included in the jar of sliced green olives. The tiny red specs are probably red peppers as part of the Italian dressing.

I love macaroni salad. My mom used to make it with green olives. So good. I don't make any pasta salads for 2 reasons: (1) I'm diabetic and try to stay away from carbs; and, (2) hubby hates pasta, especially cold. I've challenged myself to get him to try it once but so far, unsuccessfully.

He also complains he doesn't like chicken but found a budget recipe in Parade Magazine called Sticky Ginger Soy Chicken. He loves it.  I put the chicken over cooked jasmine rice.

Sticky Ginger Soy Chicken
SERVES  4

INGREDIENTS
¼ cup brown sugar
3 Tbsp soy sauce
2 cloves garlic, minced
½ tsp ground ginger
Pepper
1½ Tbsp vegetable oil, divided
8 boneless, skinless chicken thighs (about 1 ¾ lbs)
2 green onions, sliced
1 tsp sesame seeds (optional)

DIRECTIONS
Combine first five ingredients and 1 Tbsp oil for marinade. Place chicken thighs in a shallow dish or bowl. Pour marinade over chicken and turn to coat Cover and marinate at least 30 minutes or up to a day (refrigerated).

Heat a large skillet over medium. Add ½ Tbsp oil and swirl to coat bottom of pan. Add half the chicken pieces and cook until well browned on each side and cooked through (no pink when you cut in the middle). Remove to a clean plate, then repeat with the second batch.

Pour leftover marinade into pan and bring it to a boil. Continue boiling and whisking until it reduces to a thick glaze.Turn heat off, add chicken back to pan and spoon glaze over top. Sprinkle with green onions and sesame seeds.

My taco salad is a little different. But I like the idea of using Catalina dressing. I don't think they sell it around here anymore and that's why the 2 dressings mixed together.
1-1/2 lbs. hamburger
1 jar (medium) taco sauce
1 envelope taco seasoning
1 head of lettuce (shredded)
Diced tomatoes
8 oz shredded Monterey Jack cheese
1 bag 4 cheese Doritos
4 to 6 oz. Russian Dressing
4 to 6 oz. italian Dressing.

DIRECTIONS
1. Brown hamburger
2. Mix taco sauce and seasoning together. Add to hot hamburger. Set aside and let cool.
3. Mix dressings together.
4. Place Doritos on plate and top with hamburger mixture.
5. Top with lettuce, diced tomatoes, and cheese. Pour desired amount of dressing on top.
6. Serve with sour cream and salsa.

Try arugula with juice from a lemon. Ad whatever toppings you like. Simple but rather tasty and healthy!
