I tried to make it once myself but it went moldy really quickly. I absolutely love to eat sauerkraut all the time, but in my opinion, it is just better and more convenient to buy it at the grocery store. The Trader Joe’s brand is absolutely delicious. It is fully fermented and not the canned kind. Very healthy for you as well.
I have been watching videos on youtube about fermentation.  I didn't realize how much you can ferment.  Not just cabbage.  It's your probiotics for the week. Or is it prebiotics.  Both you need.

I think it is really good with pork.  On hot dogs with some yellow mustard is delicious.

My deceased husband absolutely loved sauerkraut. Especially on hot dogs. Me not so much. I made a crockpot meal once for him with a pork roast, tart apples and sauerkraut and he loved that also. I thought it was ok.

Oh yea to add to my original response I do like it best on Reuben sandwiches. Which I haven't had in a very long time.

This is an interesting subject.  I have been thinking about making my own kraut as my husband loves it.  I don't so much.  If I eat it I usually put brown sugar and butter on it and then it's good.  I will eat it mixed with some kind of ring bologna or sausage or something, but prefer putting brown sugar on it.

I haven't tried making it yet but, I did order a fermentation lid so would like to know how that goes, also.

Thank you for the tip.  I love Trader Joe's and will have to check out their kraut the next time we go.  I don't know that we've ever gotten anything from TJ that we didn't like.  They even have good wine, it you like that sort of thing.  Not only is the wine good but it's very inexpensive; not cheap, inexpensive.  There is a difference.   ;)

Yikes, sounds complicated! I think I've only tasted the tiniest molecule of sauerkraut and wasn't a fan.
