Post by: sak4kat on November 28, 2012, 10:08:51 am
You know how we can look up recipe's in the daily $0.15 area on here...there is a comic, weather, horoscopes, movie information... I want to make the Curried Sweet potato chowder but it doesn't say how many cups of sweet potatoes to use?  Anybody out there have any suggestions?

Oh my gosh!  I just realized it is missing.  I checked all the ways I know and the number of cups of sweet potatos was blank.  This sounded good.  If I were to guess, I would think 2 cups of sweet potatos.  The word cups was plural and there are 2 cups of milk/cream product plus peas etc.  It says it makes 4 servings (3 cups).  So with the cook down I guess you end up with 3 cups when you are done if I understand it correctly.  So that is my guess!  Might try to google the recipe online.   I think back how my grandmother did a little this and little that and how it looked so I think I will be brave and just take a stab at it!  Let me know if you fix or find out more info.  Good luck!!

not sure if you got the information you need but here is another way to cook it
Ingredients

3 cups cubed peeled sweet potatoes
2/3 cup finely chopped green onions
    4 teaspoons butter
    2 tablespoons all-purpose flour
    1 teaspoon curry powder
    1 teaspoon salt
    1/4 teaspoon pepper
    3 cups milk
    2 cups frozen peas, thawed
    1 cup half-and-half cream

Directions

Place 2 in. of water in a large saucepan; add sweet potatoes. Bring to a boil. Reduce heat; cover and simmer for 7-9 minutes or until tender. Drain and set aside.
In a skillet, saute onions in butter until tender. In another large saucepan, combine the flour, curry powder, salt and pepper. Gradually stir in the milk until smooth. Add the sweet potatoes and onions. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in peas and cream; heat through (do not boil). Yield: 6 servings.

Fantastic.  Thank you for the heads up.  I'm going to give it a spin in the next couple of weeks.  I'll try and remember to let you know how it turns out.

Look it up on the internet.  I'm sure it's out there somewhere.
