Off-Topic / Do you Plant a vegtable garden?

I always plant tomatoes and Red Peppers .... MY favorites.  I don't really have much room for a big garden so I plant just what we use most of.  I also plant LOTS of flowers.  I bought them all today but too tired to plant this evening.

Do you have fake nails or real ones?  I'm too chicken to get fake nails because I fear it will damage my real nails and they are so paper thin it would be a disaster!!!

Stuffed Pepper Soup


Bell peppers, chopped tomatoes and lean ground beef are simmered in broth with onions and garlic, then topped with brown rice. Everything you love about a stuffed pepper, in a soup! And this passed the picky eater test with both of my kids, they just loved it!


This hearty bowl of soup will warm you up on a chilly day. I guess you can call this a lazy stuffed pepper because it tastes just like a stuffed pepper without all the extra work. Topped with brown rice it's a satisfying meal.
 

Stuffed Pepper Soup
Ingredients:

    3 cups cooked brown rice
    1 lb 95% lean ground beef
    1/2 cup chopped green bell pepper
    1/2 cup chopped red bell pepper
    1 cup finely diced onion
    3 cloves garlic, chopped
    2 cans  cans petite diced tomatoes
    1 3/4 cups tomato sauce
    2 cups reduced sodium, fat-free chicken broth
    1/2 tsp dried marjoram
    salt and fresh pepper to taste


Directions:

In a large pot or dutch oven, brown ground meat on high heat and season with salt. Drain fat if any, reduce heat to medium-low, then add peppers, onions and garlic. Cook about 5 minutes on low heat.

Add tomatoes, tomato sauce, chicken broth, marjoram and season with salt and pepper to taste. Cover and simmer on low heat for 30 minutes. Serve about 1 1/3 cups of soup in each bowl and top with 1/2 cup cooked brown rice.

Makes about 8 cups.

I have been away for awhile ... my father passed away at the beginning of the month and I have been very busy with taking care of all the affairs.  I was with him till the last breath and that image still haunts me.  I love my Father so much and I miss him alot.  But I am very happy for him that the suffering is over and I will see him in Heaven one day.   :angel11:

I have always received email from fusion cash with no problem all of a sudden I stopped getting email. when i signed it it told me that my email address was invalid ?????????  I get email in that account every day.  I changed to one of the other accounts I have and still NO emails.  I have been going through a lot lately and haven't been online for sometime but now ready to get back into my routine.  what do i have to do to get the email started again?

What are your favorite hobby you do to relax?   I love sewing but not had time to really get into it lately.  I have started hand stitching with Wool Felt and have come up with some ADORABLE little Owls..... so cute :)  and it is therapeutic.

I found this great recipe online and wanted to share..... I think it may be dinner tonight!

Cowboy Chicken Casserole

(Recipe courtesy Emeril Lagasse)


Cook Time:
    1 hr 20 min

Serves:
    8 to 10 servings

Ingredients

    2 pounds skinless, boneless chicken *bleep*
    2 1/2 cups chicken stock
    1/2 cup dry white wine
    1/4 cup coarsely chopped fresh cilantro leaves
    1 1/2 tablespoons fresh lime juice
    2 garlic cloves, smashed
    1 teaspoon black peppercorns
    1 1/4 teaspoons salt
    1/4 teaspoon dried Mexican oregano
    2 bay leaves
    6 tablespoons unsalted butter
    1 pound white button mushrooms, wiped clean and stems trimmed, quartered
    Pinch freshly ground black pepper
    4 tablespoons all-purpose flour
    1 1/2 cups whole milk
    12 cups tortilla chips
    2 cups finely chopped onions
    1 cup finely chopped bell peppers
    2 jalapeno peppers, stem and seeds removed, finely chopped, optional
    8 ounces grated Pepper Jack
    8 ounces grated Cheddar
    1 tablespoon Emeril's Southwest Seasoning, recipe follows
    2 teaspoons chili powder
    1 teaspoon ground cumin
    1 cup chopped drained canned tomatoes
    1 (4-ounce) can diced green chiles, drained

Directions

Combine the chicken, chicken stock, wine, cilantro, lime juice, garlic, peppercorns, 1 teaspoon of the salt, the oregano, and bay leaves in a medium saucepan and bring to a boil. Reduce the heat to a simmer and cook, uncovered, for 10 minutes. Remove from the heat and allow the chicken to cool in the poaching liquid for 45 minutes. Remove the chicken from the cooking liquid and tear or cut into bite-size pieces. Reserve the chicken. Strain the cooking liquid and reserve.

Preheat the oven to 350 degrees F.

Heat the butter in a large skillet over high heat until foamy. Add the mushrooms, the remaining 1/4 teaspoon salt, and the black pepper and cook, stirring occasionally, until the mushrooms release their liquid. Continue to cook until the mushrooms are golden brown and all the liquid has evaporated, about 6 minutes. Sprinkle the mushrooms with the flour, stir to blend, and cook for 1 minute. Add the milk and stir, scraping up any bits from the bottom of the pan. Cook until the mixture begins to thicken. Add 1 1/2 cups of the reserved chicken cooking liquid, stir, and cook until very thick and flavorful, about 10 minutes. Remove from the heat.

Place the tortilla chips in the bottom of a 9 by 13-inch glass casserole. Crush the chips with your hands so they form a thin layer on the bottom of the dish. Pour 1 cup of the reserved cooking liquid over the tortilla chips and allow them to soak up the liquid. Scatter the chicken over the top of the tortilla layer. Spread the chopped onions, bell peppers, and jalapenos evenly over the chicken. Top with half of the grated cheeses. Sprinkle with the Southwest Seasoning, chili powder and ground cumin. Spoon the reserved mushroom mixture evenly over the top of the spices, then top with the tomatoes and green chiles. Cover with the remainder of the cheeses. Bake uncovered for 40 to 45 minutes, or until the cheese is bubbly and the casserole is heated through. Let sit for 5 minutes before serving.

Tip: This casserole may be prepared in advance and frozen until ready to use. Simply allow it to thaw 1 day in the refrigerator and come to room temperature before baking.

Emeril's Southwest Seasoning:

    2 tablespoons chili powder
    2 teaspoons ground cumin
    2 tablespoons paprika
    1 teaspoon black pepper
    1 tablespoon ground coriander
    1 teaspoon cayenne pepper
    1 tablespoon garlic powder
    1 teaspoon crushed red pepper
    1 tablespoon salt
    1 tablespoon dried oregano

Combine all ingredients thoroughly.

Yield: 1/2 cup

A while back I requested prayer and I appreciate all those who prayed and sent good positive thoughts my way.  I didn't mean to start a lot of controversy ... I was just so distraught and REALLY needed prayer, because I DO BELIEVE in the power of prayer  :angel11:  Although the storm rages around me I have peace.  My father is terminally ill and I really felt he was going to pass away at any moment.  He has been in the Hospice House for a week ( after being in the hospital for a month) but THANK GOD!!!  he is coming home today.  I realize it he may pass at any time but he is comfortable, stronger and in good spirits.  There are still many other issues I am dealing with but God has given me peace and strength and I know he will take care of me and all the other storms in my life.... This too shall pass.  I wrote this not to be critical of those who don't believe or don't agree with prayer etc ..... just to let everyone know I DO BELIEVE and I DO know that God hears our prayers and answers.  Also to let you know that my problems are real and dealing with someone that is terminal is very stressful.  My father is 84 and my dear mother is 82 and very ill herself.  My brother and I are caregivers and it takes a toll on your emotions and your physical body.
