Off-Topic / Anyone had lime fritos?

When my husband and I were in Mexico a couple of years ago we found some Lime fritos!!!! I have never seen them here in the USA but I live in a small town so they may have them elsewhere.   We loved them and I brought a bunch back with us.  I'd love to find somewhere I could purchase them.

Blondies (weight watcher 3 points )

2 spray(s) cooking spray   
   1/2 cup(s) all-purpose flour   
   10 Tbsp whole wheat flour, 1/2 cup plus 2 Tbsp   
   1 1/2 cup(s) uncooked old fashioned oats, do not use instant   
   1/2 tsp baking soda   
   1/4 tsp table salt   
   1/2 cup(s) packed brown sugar   
   1/4 cup(s) sugar   
   4 Tbsp unsalted butter, softened   
     1 large egg(s)   
   1 tsp vanilla extract   
   1 cup(s) apple juice, or apple cider   
   2/3 cup(s) white chocolate chips, or butterscotch chips, chopped   
Instructions

    Preheat oven to 375ºF. Coat a 15- x 10 1/2-inch glass baking dish with cooking spray.

    In a large bowl, combine both flours, oats, baking soda and salt; stir to blend and set aside.

    In another large bowl, using an electric mixer, cream both sugars and butter until light and fluffy. Add egg and vanilla; mix well. Alternating in batches, add a little flour-oat mixture and then apple juice to bowl; beat after each addition. When all the dry and wet ingredients are well-blended, fold in chips.

    Turn batter into prepared baking dish; smooth top in an even layer. Bake until top is lightly golden, about 18 to 22 minutes. Remove from oven and let cool in pan for about 10 to 15 minutes. Cut into 24 pieces and remove to wire rack to cool completely. Yields 1 piece per serving.

Do you get prints made of the pictures you take with your digital camera?  I take hundreds of pictures but very rarely every get any printed.  I just hope my computer doesn't crash and I loose them all.  I keep meaning to make backups .... something I need to make the time to do.

I love BBQ Sauce!!!  I use it instead of ketchup on my fries etc....  I like the sweet or smoking but I think the Sweet is kind with brown sugar is my favorite.  I'm having BBQ ribs for dinner tonight .... yumm

I have been so stressed lately and got to thinking I'd like to just get in my car and drive as far as I can go! or maybe get on an airplane and jet off to some Caribbean Island.  I guess you can't run from your stress but it is nice to dream about going to a nice relaxing sunny  8) beach.  How about you ?  Where would you like to go if you could go anywhere ?

Chicken and Broccoli Noodle Casserole


Shredded chicken breast and broccoli cooked with noodles in a light creamy sauce topped with toasted breadcrumbs. A simple dish the whole family will love, even the little ones!

Chicken and Broccoli Noodle Casserole

Calories: 313 • Fat: 9.9 g • Protein: 27.2 g • Carb: 31.2 g • Fiber: 4.4 g • Sugar: 2.6 g
Sodium: 256.7 mg (without salt)


Ingredients:

    6 oz Ronzoni Smart taste noodles (or no-yolk)
    2 tsp oil
    4 cloves garlic, sliced thin
    12 oz fresh broccoli florets, chopped
    1 tbsp butter
    1 medium shallot, minced
    3 tbsp all purpose flour
    1-3/4 cups fat free chicken broth
    1 cup 1% milk
    12 oz cooked shredded chicken breast
    4 oz shredded reduced fat sharp cheddar (Sargento)
    cooking spray
    3 tbsp shredded parmesan cheese
    2 tbsp seasoned breadcrumbs (I used whole wheat)

Directions:

Cook noodles in salted water until al dente, or slightly undercooked by 2 minutes. Set aside.

Heat oil in a large skillet. Add garlic and cook on medium heat until golden, about 1 minute. Add the broccoli and a little salt, sauté and cover the broccoli for about 3 minutes on medium heat until the broccoli begins to soften. Set aside.

Preheat the oven to 375°. Lightly spray a 9 x 12 casserole dish with cooking spray.

In a large pot, heat butter over medium-low heat, when melted add the shallot and cook until soft, 2-3 minutes. Add the flour and a pinch of salt and stir well, cooking an additional 2-3 minutes on medium-low heat.

Slowly
whisk

in the chicken broth until well combined over medium heat; whisk well for 30 seconds, then add the milk and bring to a boil.
Simmer

on medium heat, mixing occasionally until it thickens (about 6-7 minutes).
Remove

from heat and
add

reduced fat sharp cheddar and 1 tablespoon of the parmesan cheese;
mix well

until the cheese melts.

Add

the shredded chicken, noodles and broccoli to the sauce and mix well until evenly coated.

Pour

into a casserole dish and
top

with parmesan cheese and breadcrumbs.
Spray

a little more cooking spray on top and
bake

for about 20 - 25 minutes.
Place

the casserole under the broiler a few minutes to get the crumbs crisp and golden (careful not to burn).

Layered Mexican Chicken

An amazing Mexican twist on lasagna. Make it on a weekend and enjoy it all week long - it will last up to five days, covered, in the refrigerator.

   
2 spray(s) olive oil cooking spray   
2 pound(s) uncooked boneless skinless chicken breast(s)   
30 oz canned black beans, rinsed and drained   
2 1/2 cup(s) fat-free sour cream   
2 cup(s) shredded reduced-fat Mexican-style cheese, divided   
8 oz chopped green chili(es), two 4-oz cans   
2 tsp ground cumin   
1/2 tsp black pepper   
13 medium corn tortilla(s), cut in half each   
1 cup(s) fat free salsa, mild, medium or hot   
   Instructions
      • Preheat oven to 350ºF. Coat a lasagna pan with cooking spray.
      • Place chicken in a medium saucepan and fill with enough cold water just to cover chicken. Set pan over high heat and bring to a boil. Reduce heat to medium and simmer until chicken is cooked through, about 10 to 15 minutes; drain. When chicken is cool enough to handle, cut into 1-inch pieces.
      • Transfer chicken to a large bowl and add beans, sour cream, 1 cup shredded cheese, chilies, cumin and pepper; mix well and set aside.
      • Arrange 10 tortilla halves in bottom of prepared pan, overlapping pieces to cover surface. Top tortillas with 1/3 of chicken mixture and then layer with 8 tortillas halves. Spoon 1/3 more chicken mixture over top and then top with remaining 10 tortilla halves. Spoon remaining chicken mixture over top and sprinkle with remaining cup of cheese.
      • Bake until filling is bubbly and cheese is melted, about 30 minutes. Let stand 5 minutes before slicing into 12 pieces. Serve with salsa on the side.

I really don't understand why some people have to be so critical of others.  There are a lot of things that people do that I don't agree with or don't like but if you don't agree you don't have to try and make the other person feel bad just because you don't happen to feel the same way.

Here is a good Weight Watchers Breakfast Recipe

Pineapple Upsidown French Toast  (4 Servings)  Point value is 5

   2 large egg white(s)   
     1 large egg(s)   
     2/3 cup(s) fat-free skim milk   
   1 tsp vanilla extract   
   4 slice(s) whole-wheat bread   
   1 tsp canola oil   
   8 tsp unpacked brown sugar, divided   
   4 item(s) canned pineapple rings in juice, drained   
Instructions

    Combine egg whites, whole egg, milk and vanilla extract in a large, deep bowl. Soak bread in egg mixture for about 1 minute; set aside.

    Heat oil in a 12-inch nonstick skillet over medium heat until shimmering; place 2 slices of bread in a single layer in skillet. Spread 2 teaspoons of sugar over each piece of bread; cook bread until well-browned, about 4 to 5 minutes. Flip bread over; cook until well-browned on other side and sugar is melted, about 2 minutes more. Flip bread over again; place a pineapple ring on top of each slice. Flip bread again; cook until pineapple is warm, about 2 to 3 minutes. Set aside and cover to keep warm; repeat with remaining ingredients. Serve immediately. Yields 1 slice per serving.

I missed out last month on my posting bonus and probably going to miss this month :( and I really need the cash.  My father is very ill in the hospital (85 years old) and my mom (82 years old) is at home sick ... and I have a husband that wants me home .... I am VERY over extended, tired and stressed out.  Only manage a couple of minutes a morning on the computer.

I always eat breakfast but I am trying to loose weight so I am trying to go lighter.... any ideas?

This morning I ate about 1/2 cup of the Thick Greek Style type of yogurt with about 1/3 cup of blueberries.
