I thought this might be fun, sometimes I dont know what to cook for dinner/supper, Im sure others feel the same sometimes :) So lets share what we are having for dinner/supper that day, and maybe it will help someone else to decide what to cook LOL


And today Im having smothered sopapillas, I take homemade sopapillas smother with green pork chili, cheese, sour cream, they are soooo good!!! I had them in a restaurant 20 years ago, but they called them stuffed sopapillas

I have a whole chicken in the crockpot but he's going in the oven soon and since the hubby is on a low carb diet instead of mashed potatoes I'm making cauliflower just like you would mashed potatoes...I've already tried it once and surprisingly it is pretty good and probably a side salad :)  Happy cooking :)

Tonight is Shrimp Alfredo with some spinach thrown in, maybe some garlic toast

Im already tired of the Easter Ham leftovers lol

Oh today I have chosen to be content in something small. I have made myself a simple salad with peppers and fried potatoes, using coconut oil only. ta da!!
