Favorite Type Of Mexican Food?

i love mexican food! i'm half mexican and my husband is full mexican so there's a lot of mexican food being eaten in this house. i love enchiladas, especially if they're made with chicken picadillo and queso cotija (the way my mother-in-law makes them) YUM!!! i also love fried cheese taquitos, potato tacos, lomito, and milanesa (all the things my mother-in-law makes) i'm slowly learning all her recipes and ways of cooking so eventually everything we eat will be delicious!

this also explains why i've gained 20 pounds since first meeting my husband!

I love anything with homemade tortillas!!!  Oh how I miss them.

I make great enchiladas and burritos. For some reason my husband complains that I make  too many of these dishes, but he eats them anyway. LOL!

I just love Mexican food.  Took me about 20 years to learn to cook it right but got great lessons from an short term in-law.  My favorite is a truly good green chili made with tomatillos, jalapenos, onion and pork.  Next to that, huevos rancheros smothered in green chili.

What about a rich apple, peanut mole sauce - just a hint of chocolate over a tender chicken breast with melted jack cheese over it all.
