Recipe for Moroccan Carrot Appetizer

2 Carrots, trimmed and scraped
1/4 cup olive oil or to taste
1 tablespoon vinegar, or to taste
1 clove garlic, finely chopped
salt and freshly ground pepper to taste

How to make Moroccan Carrot Appetizer

Scrape the carrots on the coarse blade off grater. Place a mixing bowl and add the remaining ingredients.
Cover and refrigerate until thoroughly chilled. Serve and enjoy!

wish I had of read this recipe before we had dinner as we were trying to find something to go with our mushroom we broiled.
