any good recipes?

Does anyone have any good recipes they could share? I like to try new things but I have a very picky family. Right now I am getting tired of making the same things over and over.

have a great soup recipe...

it is taco bean soup and tastes sooo good!

get cans of beans (kidney, navy, black, pinto) = 1 can each
1 can corn
2 cans chopped tomatos
1 can rotel tomatos (pick med. or hot to spice it up!)
1- 2 packs of powdered hidden valley ranch dressing mix
1 pack taco seasoning
1 tablespoon chopped garlic
1 med onion
1 lb hamburger

just brown the hamburger, onion, garlic and add to large pot with other ingredients...simmer for an hour

TOP with sour cream, cheese, tortilla chips

my family is picky too so i just try to find new ways to make the things i already know they like. for example: my husband and son love chicken and potaoes. they could seriously eat chicken and potatoes every night if i would let them. so i just try to switch it up. monday i'll make pan-fried chicken strips breaded in corn flake crumbs and mashed yukon potatoes. then on wednesday i'll make honey-lemon chicken breast with sliced red potatoes that pan-fried in olive oil. and on friday i'll make lemon pepper chicken with steamed rice and grilled corn (which gets their mind off the fact that there aren't any potatoes)

That soup recipe sounds good! I am going to have to try that.

Also the chicken ideas. I know my family will eat chicken.

The only vegetable my hubby likes is corn. I struggle trying to get my oldest to eat any vegetable(even potatoes lately). My 3 year old will eat almost anything though. We eat about any kind of meat. My hubby likes chorizo and sometimes I mix that with eggs and put it in a tortilla for him. I end up making tons of casseroles, some of which my oldest will eat and some he won't.

We also like pasta and pizza.

I'll have to go to allrecipes to check it out. Maybe I can recruit my hubby into helping me find something yummy!

I like to bring this easy bean dip to parties.  It's so easy to make and people like it.  

In a square dish or pan put a layer of cream cheese on the bottom then on top of that spread a layer of salsa, on top of that a layer of refried beans, on top of that add a layer of shredded cheese.  Heat in oven until cheese melts, serve with tortilla chips

I am always looking for new recipes.  My husband will eat anything but I try my best to be creative.  This is a recipe for a GREAT dip/spread you can put on crackers or dip veggies in.  Everyone that has tasted it loves it.

CHEESY MEXICAN RANCH DIP

2 8oz cream cheese softenened  (use lowfat)
1 large red sweet pepper or 1/2 red & 1/2 green
2 green onions - use entire onion sliced thin
1 large can chopped black olives
1 can mexicorn (I use the southwest kind with black beans)
1 pkg ranch buttermilk dressing (hidden valley)
3 T sour cream (this is optional - it makes it a little softer to spread on crackers)

set out cream cheese to soften, slice pepper, entire onion & olives into small thin pieces.  Mix ranch dressing in well with cream cheese.  Add onions and peppers.  Fold in black olies, fold in corn.  Serve chilled with chips, crackers or veggies.

We served this at my Mom's restaurant with assorted crackers and warm bread. You can use it as a spread or a dip, to thin add a few drops of milk. I like it with pretzels.

1-8oz. Cream Cheese, softened
1 stick of Butter/Margarine, softened
1/2 cup grated Parmesan Cheese
Crushed Garlic or Garlic Salt, to taste
Black Pepper

Mix cream cheese and butter, add other ingredients. Adjust to taste. We use extra grated cheese and lots of garlic.

This is a great recipe also.  I have made it several times and my husband loves it.  The cheese sauce is great!

Ham Stuffed Manicotti
 
Prep Time: 35 minutes
Cook Time: 35 minutes
Ingredients:
14 manicotti pasta shells
1 onion, chopped
2 cloves garlic, minced
1 green bell pepper, seeded and chopped  (Red pepper is much better)
1/4 cup butter or olive oil
1-2 cups cooked cubed ham
1/3 cup grated Parmesan cheese
6 Tbsp. butter or olive oil
6 Tbsp. flour
3 cups milk
2 cups shredded Swiss cheese
1/2 cup grated Fresh Parmesan cheese
Preparation:
Cook manicotti as directed on package. Drain, rinse in cool water and set aside. Meanwhile, cook onion, garlic, and green bell pepper in 4 Tbsp. butter or olive oil until tender. Add ham and set aside to cool for 10 minutes. Stir in 1/3 cup Parmesan cheese.
In another heavy saucepan, cook 6 Tbsp. butter or olive oil until foamy. Stir in flour and cook, stirring constantly, until mixture bubbles, about 3 minutes. Add milk, and cook, whisking constantly, until sauce thickens. Stir in cheese. Mix 1/4 of cheese sauce with ham mixture.

Fill manicotti shells with ham mixture (your fingers work best for this; it's messy, but most efficient). Spread about 1/2 cup cheese sauce in greased 13x9" glass baking dish and arrange filled shells over sauce. If there is any leftover stuffing, just sprinkle it over the filled shells. Pour remaining cheese sauce over filled manicotti. At this point the casserole can be cooled in the refrigerator, then wrapped and frozen up to 3 months. To thaw and reheat, thaw casserole overnight in refrigerator, then uncover, sprinkle with 1/2 cup Parmesan cheese, and bake at 350 degrees F for 40-50 minutes. If not freezing casserole, sprinkle with 1/2 cup Parmesan cheese and bake at 350 degrees for 30-35 minutes until bubbly. Serves 8

 
 

 The sauce was delicate and velvety, not overpowered by the cheese. I used fresh Parmesan cheese, and also used the jumbo shells instead of manicotti. It would also be good if you add a few mushrooms to the stuffing.

Here's two more.

Artichoke and spinach dip.

clove of garlic and a can of artichoke hearts.
Spread the garlic and artichoke mixture over softened block of cream cheese and added 1/4 cup Parmesan cheese.
Cook a block of froze spinach in microwave for 5 minutes
Cook the artichoke and cream cheese in microwave for 3 minutes
Add spinach and mixed it together and microwaved for another minute.

Tastes really good with fire roasted tomato Triscuits


Seafood pasta

16   oz uncooked linguine
1   can (18.5 oz) ProgressoŽ Traditional New England clam chowder
1   cup milk
1/2   cup shredded Parmesan cheese (2 oz)
2   cloves garlic, minced
2   tablespoons olive oil
1 1/2   lb uncooked peeled deveined large shrimp, tails peeled
1   package (8 oz) sliced fresh mushrooms (3 cups)
4   medium green onions, chopped (1/4 cup)
1/4   to 1/2 teaspoon crushed red pepper flakes
1/2   cup chopped fresh parsley

   Salt and pepper to taste, if desired
1/2   cup shredded Parmesan cheese (2 oz), if desired

1.   In 5- to 6-quart Dutch oven, cook linguine as directed on package. Drain well; return to Dutch oven and cover to keep warm.
2.   Meanwhile, in blender, place clam chowder, milk, 1/2 cup Parmesan cheese and the garlic; blend on medium speed until mixture is smooth. Set aside.
3.   In 12-inch nonstick skillet or wok, heat oil over medium-high heat until hot. Add shrimp, mushrooms and onions; cook about 5 minutes, stirring frequently, until shrimp turn pink.
4.   Stir in pepper flakes and soup mixture; cook until thoroughly heated. Stir in parsley. Add salt and pepper to taste.
5.   Pour over cooked linguine in Dutch oven; toss gently to coat. Top individual servings with Parmesan cheese.
