Recipe for Homemade Chips
2 large russet potatoes
1 Tbsp olive oil
Salt and pepper to taste

Optional Toppings
2 Tbsp finely grated Parmesan
1/2 Tbsp smoked paprika
1 Tbsp chopped rosemary
1 clove garlic, minced
1/4 cup chopped parsley and the grated zest of 1 lemon

How to make Homemade Chips
Preheat the oven to 400 degree.
Scrub the potatoes with cold water and cut crosswise into 1/8 thick slices. Toss with the olive oil and season with salt and pepper.
Spread in a single layer on a baking sheet. (To use the optional toppings: Sprinkle with Parmesan, paprika, or rosemary before baking; add the parsley mixture after baking). Bake until lightly browned and crispy about 20 minutes.

I will have to try this recipe next time I get potatoes.

When I make homemade chips, I usually use White Corn Tortillas, brush them with olive oil, then bake at 400 degrees for about 10 minutes- give or take a few minutes depending on how thick the tortillas are. I make hummus to go with them and my kids love it! I bet they'll enjoy your recipe, too. Thanks for sharing!
