With all the ecoli, listeria, and salmonella in our food source that I've been hearing about in the news, definitely well done.

Actually with beef, all of those food-born bugs require some type of exposure to the outside. Thus steak that is seared on all of its sides will be fine to eat with it pink in the middle (since the pink area wouldn't have been exposed to the outside. The only thing you'd have to be worried about is if there is a lot of marbling of fat that might expose some of the interior to the outside. But usually if the steak was refrigerated right away, hasn't been sitting uncooked for a long time, and has a proper sear on the outside, you should be safe. Ground beef does present more potential for these food-born illnesses as the process of grinding the meat exposes the interior of the meat to the outside. Thus it is more important to cook your hamburgers at least medium-well, if not completely well done.

Trichinosis (the major food-born illness in pork products) actually grows in the living tissue of pigs. Thus the meat can be contaminated without being exposed to the outside. It is therefore important that pork products are cooked well done (or at least hot enough to kill off any Trichinosis that may be present).


As for my own preference, I like my steaks medium-rare and well seasoned while it's cooking so that I don't have to add steak sauce or anything else when it's served.

I love a nice juicy steak from Costco BBQd to medium rare perfection smothered in onions and mushrooms. Yummy!

I always order my steak medium. I like a little pink in the middle but, not too much. When I order it medium, I normally get it just the way I want it.

I like steak medium to medium rare and never use sauce or other enhancements on it.  When I want a steak, I want to taste the meat, not a lot of other stuff.

I used to like it WELL, WELL, WELL until I was told by a co-worker that it's the WORST way to eat a steak. I tried Medium, and have had it that way ever since.... (this was about 2 years ago now!!)

I have always ate my steak well done, but recently I have been eating it medium well and sometimes medium.  I like it better than well done.
