Try some of the newer flavored flour tortillas for this easy wrap sandwich. You could also use any meat; chopped ham would be delicious.
Prep Time: 10 minutes
Total Time: 10 minutesIngredients:
•1/3 cup honey Dijon salad dressing
•1/4 cup mayonnaise
•2 cups cubed cooked chicken breast
•1 green pepper, chopped
•2 tomatoes, chopped
•4 (10-inch) flour tortillas
•4 lettuce leaves
•4 slices Muenster or Swiss cheese
Preparation:
In medium bowl combine salad dressing and mayonnaise and mix well. Stir in chicken, green pepper, and tomatoes and mix gently.
Place tortillas on work surface and line with lettuce leaves and cheese. Divide chicken mixture among tortillas and roll up tightly, enclosing filling. Wrap in waxed paper and chill until serving time. 4 sandwiches

Ingredients
1 1/2 tbsp. butter
1 1/2 cups light brown sugar
6 tbsp. water
Popsicle sticks
8 to 10 apples (McIntoshes work well)

Instructions
Melt the butter in a saucepan. Add the brown sugar and water. Stir until it has a smooth consistency.

Gently bring to a boil, then cover and simmer for 3 minutes, until the pan's sides get steamy and the mixture is thin but somewhat sticky. Remove from heat.

Pierce the center of each apple with a Popsicle stick, then swirl in the caramel syrup until coated. Place apples on a greased cookie sheet to harden. Refrigerate for at least 1 to 2 hours. Serves 8 to 10.

Ingredients:
1/3 cup Cornstarch -- more if needed
1 1/2 cup Flour
2 teaspoons Garlic -- mince
2 teaspoons Paprika
1 teaspoon Salt
1 teaspoon Pepper
24 ounces Beer
4 Sweet Vidalia Onions
2 cups Flour
4 teaspoons Paprika
2 teaspoons Garlic powder
1/2 teaspoon Pepper
1/4 teaspoon Cayenne Creamy chili sauce
1 pint Mayonnaise
1 pint Sour cream
1/2 cup Tomato chili sauce
1/2 teaspoon Cayenne



Directions:

Mix cornstarch, flour and seasonings until well blended. Add beer, mix well. Cut about 3/4" off top of onion and peel. Cut into onion 12 to 16 vertical wedges but do not cut through bottom root end. Remove about 1" of petals from center of onion. Dip onion in seasoned flour and remove excess by shaking.

Separate petals to coat thoroughly with batter. Gently place in fryer basket and deep-fry at 375F to 400F 1-1/2 minutes. Turn over and fry 1-1/2 minutes longer or until golden brown. Drain on paper towels. Place onion upright in shallow bowl and remove center core with circular cutter or apple corer. Serve hot with Creamy Chili Sauce.

SEASONED FLOUR Combine flour, paprika, garlic powder, pepper and cayenne and mix well.

CREAMY CHILI SAUCE Combine mayo, sour cream, chili sauce and cayenne and mix well.

Ingredients:
1 large onion
1/4 ounce corn flakes, crushed
1 pinch red pepper
1 pinch seasoned salt



Directions:

Preheat oven to 350degrees F. Spray 2-cup round baking dish with cooking spray. Trim root end of onion so it stands upright. Slice off 1/2" from top and remove peel. With sharp knife, cut triangle slices to center of onion, slicing from top down and stopping 1/2" from bottom. Work your way around to make several 'petals'.

Spray with cooking spray and place in microwavable safe bowl. Cover and microwave on high for 3-4 minutes or until onion is slightly tender and petals have begun to separate.

In small bowl combine corn flake crumbs, seasoned salt, and pepper; set aside. In medium bowl whip egg white until foamy. Dip onion in egg white, coating petals thoroughly.

Place in prepared baking dish and sprinkle evenly with corn flake mixture. Bake until lightly browned and crisp (about 10-12 minutes).

Ingredients:
2 cups Flour
1 1/2 teaspoon Salt
1 teaspoon Ground Pepper
1/2 teaspoon Baking Powder
1 cup Buttermilk
1 large Sweet Onion (sliced 1/2" wide)
Vegetable Oil for Deep Frying
 

Directions:

Place buttermilk in one bowl and set aside. Mix flour, salt, pepper, and baking powder in separate bowl. Heat oil at 375F for frying.

Dredge onion rings in flour mixture first, then dip in butter milk and then coat with flour mixture again. Place onion rings in hot oil and do not crowd onion rings. When onion rings are golden brown remove from oil and drain.

1 can applesauce
2 eggs
1 c. sugar

Mix well. Bake in uncooked pie crust at 375 degrees about 35 minutes. Sprinkle top with cinnamon and butter.

APPLESAUCE PIES   

2 (16 oz.) cans applesauce
2 c.sugar
4 eggs, well beaten
2 sticks butter, softened
4 tbsp. flour
Cinnamon as desired
2 tsp. vanilla

Mix all ingredients together. Pour into 2 deep dish or 3 regular pie shells. Cook in 350 degree oven for 45 minutes or until pies are set. Serve warm with ice cream or whipped topping.

This is one of the classic tuna fish salad recipes that you can make in just a few minutes. Makes a family sized amount.

4 (6 oz.) cans tuna, drained
1 lemon, juiced (optional)
2 cups mayonnaise
4 stalks celery, diced
1/2 cup sweet pickle relish
Salt and pepper to taste

Directions

In a bowl, combine the tuna, lemon juice, mayonnaise, celery and pickle relish. Mix together well and refrigerate until ready to serve.

8 medium-sized red or white potatoes
2 large white onions
8 medium-sized cloves of garlic
1 cup, tightly packed, fresh sweet basil
1/4 cup, olive oil
1 teaspoon pepper
Salt to taste 
Cut potatoes in quarters or eighths.
Cut onions into quarters and separate.
Peel and coarsely chop garlic.
Chop fresh basil.
Heat olive oil in skillet, add onions and stir for 5 minutes, then add potatoes, garlic and basil.
Cook over medium flame until potatoes are tender.
Sprinkle with pepper and salt, stir a bit, and remove to serving bowl.

FRIED DILL PICKLES   

1 jar sliced hamburger dill pickles
1 egg
1/2 c. milk
1 1/2 c. fish fry

Mix egg and milk then dip pickles in mixture. Roll in fish fry. Deep fry in oil until golden and crisp. Drain well on paper towels.

INGREDIENTS
1 pound Red Bliss, round white, or new potatoes
4 tablespoons olive oil
2 (5-inch) rosemary sprigs
5 medium garlic cloves, lightly smashed
INSTRUCTIONS
Heat the oven to 500°F. Clean the potatoes, dry them well, and quarter them.
When the oven is heated, add the oil to a 3-quart baking dish and place it on the bottom rack of the oven to heat. Once the oil is hot and shimmering (about 3 minutes), carefully remove the dish from the oven and add the dry potatoes, rosemary, and garlic. Carefully stir to coat in oil, and season generously with salt and freshly ground black pepper.
Return the dish to the oven, placing it on the bottom rack, and roast the potatoes, checking occasionally so that they don’t burn, until a nice crust has developed and they are dark golden brown, about 35 minutes. Remove the rosemary, stir to coat the potatoes with oil and break up the garlic cloves, season as necessary, and serve.
