If I had to choose just one...Pat Metheny. But there are so many different styles it's hard to compare so here's a list of favorites... Larry Carlton, Jeff Beck, Eric Clapton, John Williams, Jimi Hendrix, Robert Fripp, Earl Klugh and so many more.

Hard to argue against pretty much all the names already mentioned.  All are great guitarists/musicians.

Mine would be either Hendrix or Jimmy Page of Led Zeppelin.
