Easy-to-Make Meals

Please help! I feel like my hubby and I have been eating the same foods over and over for months! Please post any ideas you have for some quick, easy, and not too expensive meal ideas! Here's what we've been eating so far:
-hamburgers and hot dogs
-soup
-sandwiches
-tacos/taco salad
-chicken *bleep* (fried and baked)
-frozen pizzas/meals
-mini pigs in a blanket
-mac and cheese (sometimes with ham)
-cheesy hashbrown and ham casserole
-tuna noodle casserole

I've been working on trying new things too which is hard when there's just the two of you- usually end up with lots of wasted leftovers. Some of my favorite things are:

* potpie: real easy- just take some cooked meat (i prefer to put chicken or beef in crockpot with broth so it falls apart), mix with a can of mix veg, can of cream of chicken soup (or golden mushroom for beef), a little broth to thin it out a bit, put into casserole dish and top with a fridge ready pie crust, bake!

*Baby back ribs in the oven- put some seasoning on the meaty part, wrap in oiled foil, bake in 300 degree oven for 2-3 hours til they fall apart when bent, top with sauce if you want

*Red beans n rice with sausage- get a box rice mix- Zatarains or Tony Chachere is v good- cook sausage in pot, add water and rice mix (as on pkg) and cook per instructions- one of our favorites, but not good for late nights lol Good luck!

Try making hamberger and cream of mushroom soup over bread with a vegetable on the side!! ;D Dont forget to warm up the soup and add a little milk to it!

Thank you, guys! Yes, it is just my hubby and I, and he REFUSES to eat left overs. It makes it really hard to find something for just two people. My hubby is a Marine, though. He weighs a whole 145 and can eat enough food for about three people! He never gains a pound! (Lucky.)  ;D

Stir frys are super easy to make with some left over ingredients and your husband probably wouldn't even notice they were in the meal since in realty it's a new dish.

Pork chops are also easy to make and very versatile.

If you have a crock pot, you can put in a whole roast with some raw potatos, onions, carrots and whatever other veggies your family likes. Put some water in the pot and let it sit for a hours on low. When it's done you can just slice it up and serve it almost like a stew, or put some barbeque sauce on it and make some sandwiches.

Another staple in our house are those little seasoning packets you can get at the store were all you need to add is water. Depending on what you get, you either marinade the choice of meat in them or some of them come with a bag that you can put in the oven with the seasonings.

Thanks, Jen! Yes, I am big on using my crockpot! It's so easy to just put meat in there in the morning and have it ready at supper time!

I recommend trying out some of your local ethnic markets.

I'm buddy-buddy with our local asian market owner, and she is always recommending new dishes with whatever new stock she's bringing in.

I just made myself a pot-roast on Sunday, tho I spiced it up a little over yours...

1/2 Cup red wine (I keep 2 boxed wines in a cupboard by the stove: one red and one white. Makes it easy to use for cooking without having to open a fresh bottle all the time)
1 Cup Beef Stock
1 garlic clove, minced
1 large onion, quartered
2 carots, peeled and chopped
3 potatoes, quartered
Spices to taste: Bay leaf, Rosemary, Thyme, Fennel seed, Salt, and Black Pepper (I tend to try using more of the 1st 3 spices and less salt and pepper).

I also like making Jambalaya, a Cajun rice dish. I've tacked on a recipe for that at the end. The file also has some extra info about Jambalaya, mostly from an About.com article. The only thing that you may not care for is that it can make a lot of food. But I actually like it because of that, since I can just put leftovers into plastic containers and reheat them at work for lunch (very easy to reheat). Also, it's extremely versatile; you can really put anything into it -- even leftovers from other dishes. I like to use corn and red-beans in mine although true Jambalaya shouldn't have those added. I also like using more seafood in mine: crab (or actually immitation crab meat) I usually use and sometime blue marlin (which has a tougher consistency similar to chicken) but that sometimes gets too expensive.

Spaghetti is easy.

My dad makes amazing pot roast, but I don't know the recipe. He puts tomato juice and mushroom soup in it.
