what's for dinner tonight!

I am running out of ideas for dinner.  I had planned on chicken enchiladas but have lost the recipe.  Any ideas for a quick dinner?

I usually do on a daily basis sometimes more then once per day if everyone is home for all 3 meals but not today. We got Jack In The Box today but tomorrow I will be cooking something :) Idk what yet  :thumbsup:

Do you make ur Sauce from scratch ? What type of enchiladas do you make?

quiche isn't a lot of work, especially if you are using a premade crust.  I make my own polenta crusts for mine.  there are a thousand variations on a theme within quiche as well.  throw in some veggies, fresh fruit, and maybe a nice chunk of sweet-type bread...mmm  mmm   :heart:

Yes I make everything from scratch ... well almost everything.  I made Chicken enchiladas ... I had lost my original recipe but I think I liked these better anyway.  Tonight I think it will be scalloped potatoes and ham .... maybe a salad and some nice crusty bread.

      :)    A small snack before bedtime. My main meals are breakfast and lunch because I need to burn those extra calories before bedtime. All my dinners are small snacks while I watch TV before going to bed.
