Homemade Thin mints nom nom nom Recipe

1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
1/2 cup butter, softened
1 cup white sugar
1 egg
1/2 teaspoon mint extract
3 (1 ounce) squares semisweet chocolate, chopped
1/4 cup butter


In a large bowl, beat 1/2 cup butter or margarine until creamy. Add the sugar, and beat until mixed well. Beat in egg and mint extract.
Sift flour, cocoa, and salt together into a small bowl. Add flour mixture by halves into creamed mixture, beating well after each addition.
Divide dough in half. On lightly floured surface roll dough into two 1 1/2 inch diameter cylinders. Wrap each cylinder in waxed paper, and refrigerate 5 hours.
Preheat oven to 350 degrees F (175 degrees C). Thirty minutes prior to baking, place both cylinders in freezer.
Remove one cylinder at a time, and slice 1/4 inch thick pieces with very sharp knife. Place on cookie sheets about 1 1/2 inches apart. Bake 10 to 12 minutes.
Melt 1/4 cup butter or margarine and the semisweet chocolate in a double boiler or in the microwave. Drizzle over warm cookies. Place on wire racks, and let cool and harden completely.

 ;D OH MY this recipe looks and sounds absolutely AWESOME and I can't wait to try it out.  I imagine that this is going to end up being a family favorite.  I never thought about trying to find a recipe for homemade thin mints although I don't know why because we love similar store bought products which are NEVER as good as the homemade versions.  So, again, its off to the store tomrrow to get the ingredients.  YUM YUM

Thanks butterflywings for this!!  I have a day off from work tomorrow and this will be a fun project to do...and I LOVE chocolate & mint!  Can't wait to get the stuff together & try this one out!!

Things are good...had been working 66-76 hours a week and there wasn't much time left for FC (or sleep).   Three days after I had decided to quit the second job, my primary job let me know I could either change shifts or I would no longer have a job due to cutbacks.  So now it's ONE job and I have to be available 24/7 to get as many hours as I can but I still expect to have more "free" time than I did before (to play on FC, try out your newly posted recipes and spend time with the pets.)   :) ***The thin mints recipe is fantastic, sending some of these to my dad for Valentines Day.

Sheryl...I have been good busy started a craft page and have been so so busy it started slow then picked up and I have so many orders and making new stuff lol..Plus we are getting ready to move back to Michigan asap so been getting house ready and ducks in a row I am so excited to be able to go home ..Other than that not to much else making yummy food and my bootay shows it lol..Still got my baby doggies 4 lol and I got my hubby a baby bearded dragon for x-mas omg hes so cute and sweet..LOL Hope to see ya more busy lady I miss ya  :heart:

...Are your crafts on Etsy?  I'd love to check them out, so let me know where.  I'm glad your orders are taking off.  Moving will keep you plenty busy, I'm not sure what you're thinking with the Michigan winters vs the Fla winters...LOL.  I'm glad the 4 baby dogs are doing great, they're all going to need sweaters for Michigan-living :)  I bet your hubby LOVES the baby bearded dragon, what a great gift idea!!  They are cute and make excellent pets.  There's a guy in our area that has had one since it was a baby and he brings it into the local pet store with him all the time when he goes there to buy it's food (I think he likes to let the sweetie pick out his own crickets or something...jk!) everyone is just amazed at how sweet the bearded dragon is...and then all the kids that see him want one.  :)
