Recipe for Zucchini Pepperjack Cassrole

Ingredients

12 c. seasoned bread crumbs
2 lb. zucchini thinly sliced
8 oz Monterey Jack cheese, cubed
8 oz pepperjack cheese cubed
6 eggs
3/4 c. milk
3/4 tsp. salt
3 tsp baking powder
5 Tbs all - purpose flour

1 Tbs. butter

Directions

Preheat the oven to 325 degrees F. Generously butter a 9 x 13 inch baking dish, and coat with some of the bread crumbs.
Place the zucchini into the pan, and distribute the cheese evenly over the top.

In medium bowl, mix together the eggs, milk, salt, baking powder snd flour.
Spoon over the top of the casserole, and dot with butter,
Sprinkle remaining bread crumbs over the top. Bake for 45 minutes in the preheated oven, or until the topping is cooked through. Pick up a piece of the topping and peek underneath to see if it is no longer gooey.

That really sounds good. I am always on the look out for good zucchini reciepes. I am going to make it. I have given so much zuc away this year. Even sent some back to Alasaka with ny sister. It cost so much there. Thanks

Thanks for the recipe. It looks delicous. Since I am always looking for was to "spuce up" veggies. I am putting this on the menu

My brother in law made a zucchini and yellow squash dish. Just slice those up and add onions, butter, and a little cinamon and it was really good, he made to much and I brought a square pan to my parrents and they loved it.

3 squash
3 zucchini
1 medium onion or large
1 stick of butter
sprinkle the cinnamon over the top and bake.

We plan on putting a garden in next spring so I'll have to remember these zucchini recipe's.  I remember in years past when the  garden veggies are ready to harvest we always had an over abundance of some more than others.  Zucchini being one of them.  Other than zucchini bread and pancakes I've not tried anything else.  So these would be refreshing options.
