I really prefer my meat to be at least medium.  Prime rib is the only one I like medium rare.

I don't eat beef any more, but do eat bison.  I always prefer medium well, even with tuna steak and chicken.  I don't want to see any blood in my meat.  It's just not a bit appetizing, but like aggie49, at my house, my husband wants everything medium rare.  He does eat beef occasionally, but I just don't understand how he can eat his meat so rare.  Sometimes it looks like they just browned the outside quickly, and left the inside raw.  Not for me!

I like all beef medium rare everything else cooked medium to well done.

Since I was a kid i have always liked my steak to be medium rare, i think the pink juiciness to a steak is the central taste of it. I feel like well done or dried out steaks just have no taste to them.
