I like a variety of spices. They are, as they say, what makes the dish. In particular, I can't fathom making a spaghetti dish without onions and garlic. It's never the same otherwise.

I love my cinnamon/sugar mix for pork chops, taco seasoning, fajita seasoning, garlic, bay leaves, chili powder, Old Bay, dried ginger, rib and chicken rubs, and so many more.  I don't know why, but I bought Allspice a couple years ago and still don't know what to do with it; same with Curry and Chinese Five Spice powder. Bought wasabi mustard too. I have a 4-shelf spice rack on the door of my pantry and 2x3 foot shelf full of spices. :)

I'm guilty of high spice hoarding myself.  That and cookbooks.  The  old adage of the secret to getting a man is through is stomach is true in my household.  My husband HATES to cook.  He LOVES to save money.  So when I can show him how my spice concoctions can save $$$ rather buy pre-packaged spices he's swooning.  There is only one spice (so far) I've come across that I use sparingly as I don't care for it much...Cumin. A little goes a long way with this stuff.  I also wish I enjoyed the flavor of cilantro more... particularly the fresh stuff.

My favorite spice is garlic powder. I use it on almost everything. However I have many other spices I also use.

I do like spices, but one thing, it hikes up the blood pressure so I got to be careful. I like cinnamon, and sweet chili powders, garlic, others.

I don't use a lot of spices...  but I am making an effort to include Turmeric in my dishes this year.  I've been reading a lot about that spice & it's benefits, including anti-inflammation.

I usually cook with fresh spices & only around the holidays.  Basil, parsley....

I like to use paprika. My son puts it on his ramen noodles for some reason he says it makes them taste better. I am venturing into using more types of spices now as I see they really do enhance the flavor of your food.
