My husband and I are having Shell steaks and a nice big salad which will have romain lettuce and nice red tomatoes. Trying to stay away from the carbs and eat healthy.

We had pork roast last night. So tender! So tonight I will take the leftovers and make BBQ pork sandwiches, macaroni salad and potato chips.

We are having  marinated thinly sliced steaks & hot dogs on the BBQ, Spanish Rice, Homemade Salsa, and fresh homemade tortillas  :thumbsup:

Lasagna Rolls.

Make some meat sauce and pour half into a baking dish, then make the filling with is ricotta and an egg and parmesean cheese add vegetables if you would like, then spread this on a cooked lasagna noodle. Then roll hem up and put into pan then more sauce cook at 400 for 20 to 30 minutes. Last five minutes sprinkle mozerella on top. They are delicious and you can serve with garlic bread and salad. ;)

Since today has been jammed packed, two church services! And I'm at work for one more hour :) Dinner will be whatever fastfood place is open and on the way home.

Mexican Roast, it is a favorite of my family.
Mexican Roast
1 Beef Roast diced up into 1 inch pieces
1 can diced tomatoes with green chilies or 1 small can diced green chilies
1 large Salsa
1 garlic clove minced
Package of Flour Tortillas
1 can of Refried Beans
Mexican cheese mix or any cheese
Sour Cream
Put 1/2 to 3/4 of Salsa in the cooker with tomatoes with chilies (and juice) with roast and garlic the night before on low, in the morning put it on high, stir well, by 2 or 3 pm you will be able to pull the roast into shreds with a spoon, the meat will be done when there is no more liquid after shredding. When its time to eat, butter both sides of the Tortillas on wax paper. Put a line of cheese down the middle, then meat, and on top put the beans. Fold ends in first, then roll like a burrito. Place on a cookie sheet in the oven (preheated at 350°). Takes about 5 or so minutes until tortillas are browned. Serve with sour cream on top and salsa. Can also put in taco shells and you can do this with pork too.
