Christmas Dinner
« on: December 16, 2011, 09:31:12 am »
I have traditions for what I make on Easter and Thanksgiving.  I want to do the same for Christmas Day.  What do you have to eat for dinner on Christmas Day?

I was just discussing Christmas Dinner last night. At my house it depends. We tend to either have lamb or lobster, sometimes both. We actually make a lot of food and preparations but those are the main course. If we have lamb as the main course I remember us sometimes having some clam chowder. Dunno what we will eat this year but I'm hopping for some lobster. YUMMMMMMM

Oh and need I saw eggnog?

Unlike Thanksgiving we don't have traditional Xmas meals.  This year will most likely be chicken.  I'm actually making adobo chicken tomorrow.  I love adobo chicken.  It's like the national dish of the Philippines.  I found this easy recipe.  It's something different.

Ingredients

    2 tablespoons vegetable oil
1 (3 pound) chicken, cut into pieces
1 large onion, quartered and sliced
    2 tablespoons minced garlic
    1/3 cup white vinegar
2/3 cup low sodium soy sauce
    1 tablespoon garlic powder
    1 tablespoon black pepper
    1 bay leaf

Directions

Heat the vegetable oil in a large skillet over medium-high heat. Cook chicken pieces until golden brown on both sides, then remove. Stir in the onion and garlic; cook until they soften and brown, about 6 minutes.
Pour in vinegar and soy sauce, and season with garlic powder, black pepper, and bay leaf. Add the browned chicken, increase the heat to high, and bring to a boil. Reduce heat to medium-low, cover, and simmer until the chicken is tender and cooked through, 35 to 40 minutes.

I am going to be making my famous enchiladas that my husband absolutely adores. Good thing my 3 year son likes them so well too, since he is the pickiest eater I have ever seen. Haha!  ;D
It will be just us 3 this year. In the past we would go spend Christmas with family and get dinner too, but I told my husband that we need to be making our own traditions. So we decided that I will make my famous enchiladas in exchange that we will have a Christmas movie marathon all day long. Oh, and play Christmas music during dinner. I love Christmas so much. It is my favorite Holiday and I am trying so hard to get my husband in the Christmas spirit.  :P

My siblings and I go over mom and dad's for Christmas and we each usually bring a side dish or two. My mom makes the basic turkey, dressing, cranberry sauce, greens, and at least 3 desserts. My mom leaves the decision up to us as far as what we want to bring, so it varies. Usually, I'm asked to make the macaroni and cheese.

we've spent christmas with my fiance's family
for several years (and travel to see mine for thanksgiving).
i prefer turkey, but they do ham... i usually make cornbread
salad and some kind of desert to take. not sure what i'll be
making this year.

his mom doesn't get extravagant in the kitchen, so i'm
spending the night with her christmas eve and "helping" her
with christmas dinner. by helping, i mean giving her dishes
some flavor without letting her know that, lol  :P
[ we all have a place in history. mine is in the clouds. ]

Usually my Christmas dinner is much like my Thanksgiving dinner. Turkey, filling and all the other stuff on only eat twice a year.

I don't get christmas this year. I am homeless thanks to my adoring husband

I'm sorry to hear that.  I was almost in the same boat, but some friends helped me get a new start.

Most years I do a turkey with all the trimmings, the old fashioned way.  I started this tradition the year I got divorced to insure I had a way to keep busy on Christmas day and not feel alone.  It turned out to not be a problem, but I keep the tradition.  I'll be keeping it this year.  I'll be baking bread and cornbread this weekend so it can dry out for stuffing.  I've got pumpkin to mash for pie, etc.  Then Christmas day I'll hand baste a stuffed turkey to golden goodness while watching Christmas movies.  On "Little Christmas" I'll bake up holubsti and do my version of a Urainian Christmas for mom's side of the family.

I'm big on genealogy and family history so I like to incorporate something from all the cultures of my ancestors.  Recent discoveries have made that more complicated though.  One year I did the traditional American Thanksgiving then did a goose for Christmas to honor my British and German ancestors, followed by a Ukrainian "Little Christmas" on January 7th.  Now I've found Irish, Canadian, Dutch and French ancestors.  Whew, I'll have to get more creative!

We used to have lamb or ham and rotate between the two meats. Green bean casserole is a favorite for either Thanksgiving or Christmas or even both holidays. When my grandma and Aunt Helen were alive, we frequently had dumplings with the meal. The plans haven't been discussed yet for the meal this year. I don't know  whether anyone will cook or not. Restaurants are open for the holidays.

Anything classy. It's not like thanksgiving with soo much food like turkey and all. And beside classy you can have these Candy canes which is also nice.
