What do you like to cook in a crock-pot as a family meal?

There are several that I like to make, but one of the things I love using mine for is making stuff I can use for multiple meals.

One thing I like to do, I take a large package of chicken, put it all in my 7qt. and set it on LOW for 6 hours or until the chicken is done. I don't add anything else usually. After I am done, I will shred it. I put 2 cups in bags and freeze. Then I can pull it out when I want for different dishes. I use it for tacos, salad toppers, enchiladas, chicken salad, etc.

Since I have 2, I will usually have both out at the same time. One will sometimes have that night's dinner in it. Other times, like earlier in the week, I made roasts for taco meat or shredded meat for other things!
It saves me a lot of time later on.

When you make your chicken, how do you make it? I've thought of doing a whole one before, but not sure how.

I love to cook pot roast with carrots, celery, and potatoes. The only was I cook it now is with the crock-pot because it's so easy and comes out perfect every time.

Lots of soups and pulled pork.  I made a beef stew last week that was pretty delicious!

i make New England Boiled Dinner without all that water like you would in a regular pot. I also make stuffed peppers in it and regular beef roasts, but that's about it. I was given a crock pot cookbook a couple years ago for Christmas, but don't use it much.

Any tough meat is great done in the crock pot. Our foster son gave us some beef and pork that he raised himself and the meats were so tough, the crock pot was the only way we could eat it. Even the ham slices were tough! We still appreciated the meat but hopefully, he will learn the right combination of raising cattle and pigs. :)'

My favorite crock pot recipe is one made with pork shoulder, or butt as some people call it. You place onion wedges on the bottom of your crock pot, you salt and pepper your pork shoulder and place it on top of the onions. You add two cans of soda (I use diet coke), and then place a couple of chipotle peppers in the mixture. The dish also benefits from about 4 tablespoons of sugar (brown or white, it doesn't matter). I leave this to simmer for a few hours, preferably overnight, and then in the morning you have a delicious, fork tender pulled pork dish. It's so easy.
