Last week I made sweet potato fries. I didn't realize the only ones in my household who really enjoy the is my oldest daughter and I. Since she's in college I had a ton of fries mostly all to myself. So I didn't bake em all. Saved what was peeled and cut to make a mini Thanksgiving dinner last night. Instead of turkey we tenderized chicken, spread a layer of cream cheese onion and chive and rolled a piece of bacon in the middle then wrapped the chicken with more bacon. Had all the fixin's and it was AMAZING! I think I'm going to make a mini Thanksgiving dinner once a month next year. BTW the entire meal took about an hour 1/2 to prepare and cook.

So it got me thinking.. I don't know much about Oregon. What kind of seasons do they have? Is it real real cold in the winter? Real real HOT in the summer. Are the springs and summer anything at all like they are in Chicago-land? Curious mind...thinking bout' the future and taking in information.
